Spicy Triangle Sandwiches 

12 slices bread

FILLING:

500g chicken (cubed/shredded)

1 tsp salt

1 tsp black pepper

1 tsp chicken spice

1 tsp green chillies grounded

1 tsp mustard

2 tbs chilli garlic sauce

¼ cup mixed veg. (boiled)

1 tomato (chopped)

1 tbs. Butter

1 tbs oil

coriander leaves (chopped)

SPICY EGGS:

3 beaten eggs

coriander leaves (chopped)

½ tsp salt

½ tsp red chillies

METHOD:
Combine the chicken cubes with spices, mixed veg and tomato.  Cook with the butter and oil.  Cool.  Add chopped coriander leaves.  Make sandwiches with the filling. Cut each sandwich into 4. Combine eggs,

coriander, salt and red chillies.  Beat. Dip in spicy beaten eggs and breadcrumbs and fry in shallow oil till golden brown.  Serve with spicy sauce.

SPICY SAUCE:

1 x 400g chilli sauce

1 x 470g Mrs Balls Mixed fruity chutney

½-1 cup tomato sauce

2 tbs tamarind soaked in ½ cup vinegar

½ cup oil

curry leaves

Sesame seeds

mustard seeds

2 tbs apricot jam

METHOD:
Put first 4 ingred. In a pot over low heat.  Allow to simmer. Place oil in separate saucepan.  Add curry leaves, sesame seeds and mustard seeds.  Allow to braise. Add to the first mixt.  Lastly add apricot jam.
