Drizzle with olive oil and sprinkle with vegetable spice, salt &amp; pepper. Roast in the oven until well roasted and tender.<\/p>\n<p>Liquidize<\/p>\n<p>Transfer roasted veggies to a blender. Add sun dried tomatoes. Blend until smooth and creamy<\/p>\n<p>Make Vagaar<\/p>\n<p>In a pot, heat some oil. Add chopped onions and saute until soft. Add green masala, salt &amp; pepper. Saute well.<\/p>\n<p>Combine<\/p>\n<p>Add the liquidized roasted veggies to the vagar. Stir well and let it simmer. Add a dash of lemon.<\/p>\n<p>Finish<\/p>\n<p>Add chopped danya (coriander) and fresh cream. Stir and simmer for a few minutes.
