{"id":14899,"date":"2015-05-28T06:05:28","date_gmt":"2015-05-28T04:05:28","guid":{"rendered":"http:\/\/dev.radioislam.org.za\/wordpress\/2015\/05\/28\/savouries-with-mince-recipes-28-05-15\/"},"modified":"2015-05-28T06:05:28","modified_gmt":"2015-05-28T04:05:28","slug":"savouries-with-mince-recipes-28-05-15","status":"publish","type":"post","link":"https:\/\/radioislam.org.za\/a\/savouries-with-mince-recipes-28-05-15\/","title":{"rendered":"Savouries with mince recipes (28.05.15)"},"content":{"rendered":"<p style=\"text-align: justify;\"><strong><span style=\"font-family: verdana,geneva; font-size: 12pt;\">Chicken seekh kebab<\/span><\/strong><\/p>\n<p><span style=\"font-family: verdana,geneva; font-size: 12pt;\">500g of chicken mince (you can also use beef mince , but u need to add half fatty mince and half steak mince) washed and strained till all water removed <\/span><\/p>\n<p><span style=\"font-family: verdana,geneva; font-size: 12pt;\">Add about 5-7 green chillies (chopped in pieces)<\/span><br \/><span style=\"font-family: verdana,geneva; font-size: 12pt;\">Add about 5 red chillies ( chopped in pieces) <\/span><br \/><span style=\"font-family: verdana,geneva; font-size: 12pt;\">Add a handful of coriander ( finely chopped ) <\/span><br \/><span style=\"font-family: verdana,geneva; font-size: 12pt;\">Add garlic paste ( about 2 tsp)<\/span><\/p>\n<p><span style=\"font-family: verdana,geneva; font-size: 12pt;\">Then add about 1 tsp of Dhana powder and 1 tsp of jeero powder , 1\/4 tsp of garam masala powder and a pinch of ginger paste.<\/span> <span style=\"font-family: verdana,geneva; font-size: 12pt;\">Add juice of one lemon, and enough salt to taste. <\/span><span style=\"font-family: verdana,geneva; font-size: 12pt;\">Add about had cup of breadcrumbs and 1tsp chilli powder. M<\/span><span style=\"font-family: verdana,geneva; font-size: 12pt;\">ix all ingredients till well blended ( or mix in a mixer (food processor). <\/span><span style=\"font-family: verdana,geneva; font-size: 12pt;\">shape the kebabs on sticks or metal skewers. <\/span><span style=\"font-family: verdana,geneva; font-size: 12pt;\">Freeze for ten minutes\u00a0<\/span><\/p>\n<p style=\"text-align: justify;\"><span style=\"font-family: verdana,geneva; font-size: 12pt;\">Brush butter over a non stick griddle &#8230; and add\u00a0 the kebabs , turning every few seconds and brushing over melted butter till cooked evenly. (Butter will stop the meat from drying if it is very lean meat) <\/span><span style=\"font-family: verdana,geneva; font-size: 12pt;\">when ready to serve, heat the kebabs over charcoal on a bbq &#8230; <\/span><span style=\"font-family: verdana,geneva; font-size: 12pt;\">Serve with naan and green chutney and shredded lettuce mixed with cucumber<\/span>.<\/p>\n<p><strong><span style=\"font-family: verdana,geneva; font-size: 12pt;\">Green chutney: <\/span><\/strong><br \/><span style=\"font-family: verdana,geneva; font-size: 12pt;\">grind a hand full of mint leaves, with few green chillies and juice of 1 lemon &#8230; Add to half a tin of yogurt &#8230; Add salt and citric acid if needed.<\/span><\/p>\n<p><strong><span style=\"font-family: verdana,geneva; font-size: 12pt;\">Khima puri<\/span><\/strong><br \/><span style=\"font-family: verdana,geneva; font-size: 12pt;\">cubed chicken fillet<\/span><br \/><span style=\"font-family: verdana,geneva; font-size: 12pt;\">cook in ghee, green masala, salt and pepper.<\/span><br \/><span style=\"font-family: verdana,geneva; font-size: 12pt;\">When almost done add a grated onion and cook for a while.<\/span><br \/><span style=\"font-family: verdana,geneva; font-size: 12pt;\">Add 1 tablespoon mayonnaise, greens and 2 chopped boiled eggs to cold cooked meat.<br \/><\/span><br \/><strong><span style=\"font-family: verdana,geneva; font-size: 12pt;\">Dough<\/span><\/strong><br \/><span style=\"font-family: verdana,geneva; font-size: 12pt;\">2 cups flour<\/span><br \/><span style=\"font-family: verdana,geneva; font-size: 12pt;\">2 tspns baking powder<\/span><br \/><span style=\"font-family: verdana,geneva; font-size: 12pt;\">salt<\/span><\/p>\n<p><span style=\"font-family: verdana,geneva; font-size: 12pt;\">cold milk and water<\/span> <span style=\"font-family: verdana,geneva; font-size: 12pt;\">Make dough with above and form into 9 balls.<\/span> <span style=\"font-family: verdana,geneva; font-size: 12pt;\">Roll small rotis, put a teaspoon of ghee on 8 rotis and spread about. Sprinkle flour and stack all rotis. Roll into 1 big square. <\/span><span style=\"font-family: verdana,geneva; font-size: 12pt;\">Cut into squares. Put a little filling and laai on the edges. Fold across. Seal.<\/span><br \/><span style=\"font-family: verdana,geneva; font-size: 12pt;\">Fry in medium hot oil.<\/span><\/p>\n<p><strong><span style=\"font-family: verdana,geneva; font-size: 12pt;\">Marshmallow kebabs<\/span><\/strong><\/p>\n<p><span style=\"font-family: verdana,geneva; font-size: 12pt;\">500 g fillet cubed<\/span><br \/><span style=\"font-family: verdana,geneva; font-size: 12pt;\">2-3 tbsp of feta cheese crumbled. Add green masala to taste<\/span><br \/><span style=\"font-family: verdana,geneva; font-size: 12pt;\">1\/2 cup boiled macaroni<\/span><br \/><span style=\"font-family: verdana,geneva; font-size: 12pt;\">1\/4 cup chopped greens<\/span><\/p>\n<p><span style=\"font-family: verdana,geneva; font-size: 12pt;\"><strong>White sauce<\/strong>\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 <\/span><br \/><span style=\"font-family: verdana,geneva; font-size: 12pt;\">1\/2 tbsp butter<\/span><br \/><span style=\"font-family: verdana,geneva; font-size: 12pt;\">1\/2 tbsp flour<\/span><br \/><span style=\"font-family: verdana,geneva; font-size: 12pt;\">1\/2 cup milk. <\/span><br \/><span style=\"font-family: verdana,geneva; font-size: 12pt;\">TOPPING<\/span><br \/><span style=\"font-family: verdana,geneva; font-size: 12pt;\">1 egg beaten<\/span><br \/><span style=\"font-family: verdana,geneva; font-size: 12pt;\">1 cup extra fine raw vermicelli. <\/span><\/p>\n<p><span style=\"font-family: verdana,geneva; font-size: 12pt;\">Cook chicken with green masala (salt crushed jeera ground garlic n green chilli) add a good dash of lemon juice cook until done (don&#8217;t add 2 much salt because feta has a high salt content) add boiled macaroni and greens when a bit cool. Make white sauce(thick n not runny)add feta and mix with meat mixture(should b moist like kebab mixture)pat flat in a lightly greased baking tray n refrigerate until hard then cut into 3cm squares. Carefully dip in egg n roll in crushed vermicelli(should have a marshmallow effect)place on greased baking pan pour 1\/2 tsp oil over each n bake 180.c for 10-12 min.remove when vermicelli is golden brown. PS can b fried but so much healthier to bake them. PS instead of vermicelli u can substitute sesame seeds.<\/span><\/p>\n<p><span style=\"font-family: verdana,geneva; font-size: 12pt;\">NB.. I doubled d white sauce recipe &amp; adjust filling to how hot u like it&#8230;u can add grated cheese as well!<\/span><\/p>\n<p><strong><span style=\"font-family: verdana,geneva; font-size: 12pt;\">Sausages pies with green chutney<\/span><\/strong><\/p>\n<p><span style=\"font-family: verdana,geneva; font-size: 12pt;\">1kg chicken mince<\/span><br \/><span style=\"font-family: verdana,geneva; font-size: 12pt;\">3 slices bread<\/span><br \/><span style=\"font-family: verdana,geneva; font-size: 12pt;\">1 onion chopped-squeeze out water<\/span><br \/><span style=\"font-family: verdana,geneva; font-size: 12pt;\">1 Egg<\/span><br \/><span style=\"font-family: verdana,geneva; font-size: 12pt;\">1 tsp baking powder<\/span><br \/><span style=\"font-family: verdana,geneva; font-size: 12pt;\">2 tbsp sojee<\/span><br \/><span style=\"font-family: verdana,geneva; font-size: 12pt;\">1 tsp dhana jeeroo<\/span><br \/><span style=\"font-family: verdana,geneva; font-size: 12pt;\">1\/2 tsp black pepper<\/span><br \/><span style=\"font-family: verdana,geneva; font-size: 12pt;\">1 tsp garlic<\/span><br \/><span style=\"font-family: verdana,geneva; font-size: 12pt;\">Ground green chillies to taste<\/span><br \/><span style=\"font-family: verdana,geneva; font-size: 12pt;\">Salt to taste<\/span><br \/><span style=\"font-family: verdana,geneva; font-size: 12pt;\">1 tbsp oil<\/span><br \/><span style=\"font-family: verdana,geneva; font-size: 12pt;\">Dhanya-chopped fine<\/span><\/p>\n<p><strong><span style=\"font-family: verdana,geneva; font-size: 12pt;\">Method:<\/span><\/strong><br \/><span style=\"font-family: verdana,geneva; font-size: 12pt;\">Process well together. Cut pastry 9 cm wide &amp; about 30 cm long. Spread dhanya chutney in the centre of each strip. Pipe minces over with a piping bag to form long sausages. Close pastry. Place pie onto tray, brush egg, sprinkle parsley, and make slits. Put into freezer till firm.
