Beat the egg whites until stiff. Gradually beat in the caster sugar.\u00a0<\/span><span style=\"font-family: verdana, geneva, sans-serif; font-size: 12pt;\">Cut the Madeira cake in half horizontally, then cut out 4 rounds using a large cookie cutter.<\/span><\/span><br \/><span style=\"color: #000000;\"><span style=\"font-family: verdana, geneva, sans-serif; font-size: 12pt;\">Place a scoop of ice cream on top of each round of cake.\u00a0<\/span><span style=\"font-family: verdana, geneva, sans-serif; font-size: 12pt;\">Cover with the meringue and bake for 3\u20135 minutes or until the meringue is golden.
