{"id":20293,"date":"2017-06-01T06:14:08","date_gmt":"2017-06-01T04:14:08","guid":{"rendered":"http:\/\/dev.radioislam.org.za\/wordpress\/2017\/06\/01\/fattoush-recipe-01-06-17\/"},"modified":"2017-06-01T06:14:08","modified_gmt":"2017-06-01T04:14:08","slug":"fattoush-recipe-01-06-17","status":"publish","type":"post","link":"https:\/\/radioislam.org.za\/a\/fattoush-recipe-01-06-17\/","title":{"rendered":"Fattoush recipe (01.06.17)"},"content":{"rendered":"<p style=\"text-align: justify;\">\u00a0<\/p>\n<p style=\"text-align: justify;\"><strong><span style=\"font-family: verdana, geneva, sans-serif; font-size: 12pt;\">Ingredients:<\/span><\/strong><br \/><span style=\"font-family: verdana, geneva, sans-serif; font-size: 12pt;\">\u2022 5 cups tomatoes (chopped)<\/span><br \/><span style=\"font-family: verdana, geneva, sans-serif; font-size: 12pt;\">\u2022 3 \u2013 4 cups cucumbers (preferably Persian or Lebanese)<\/span><br \/><span style=\"font-family: verdana, geneva, sans-serif; font-size: 12pt;\">\u2022 1 tblsp spring onion or shallot (finely chopped)<\/span><br \/><span style=\"font-family: verdana, geneva, sans-serif; font-size: 12pt;\">\u2022 1 tblsp (or more) of mint leaves (finely chopped)<\/span><br \/><span style=\"font-family: verdana, geneva, sans-serif; font-size: 12pt;\">\u2022 1 bunch of Italian parsley (remove stem, use only the leaves)<\/span><br \/><span style=\"font-family: verdana, geneva, sans-serif; font-size: 12pt;\">\u2022 \u00bc bunch red radish (chop into thin disks, and hereafter halve them)<\/span><br \/><span style=\"font-family: verdana, geneva, sans-serif; font-size: 12pt;\">\u2022 20 leaves of romaine lettuce (chopped or shredded)<\/span><br \/><span style=\"font-family: verdana, geneva, sans-serif; font-size: 12pt;\">\u2022 1 small or medium green pepper (diced fine)<\/span><br \/><span style=\"font-family: verdana, geneva, sans-serif; font-size: 12pt;\">\u2022 2-3 cloves of garlic (crushed, with a dash of salt &amp; set aside)<\/span><br \/><span style=\"font-family: verdana, geneva, sans-serif; font-size: 12pt;\">\u2022 2 tblsp of Summaaq (sumac)spice<\/span><br \/><span style=\"font-family: verdana, geneva, sans-serif; font-size: 12pt;\">\u2022 \u2153 cup (or less) of pomegranate molasses<\/span><br \/><span style=\"font-family: verdana, geneva, sans-serif; font-size: 12pt;\">\u2022 \u00bd cup of freshly squeezed lemon juice<\/span><br \/><span style=\"font-family: verdana, geneva, sans-serif; font-size: 12pt;\">\u2022 5 Lebanese pita bread pieces<\/span><br \/><span style=\"font-family: verdana, geneva, sans-serif; font-size: 12pt;\">\u2022 \u2153 cup (or less) of Olive Oil<\/span><br \/><span style=\"font-family: verdana, geneva, sans-serif; font-size: 12pt;\">\u2022 \u00bd to 1 tsp salt (I use Pink Himalayan)<\/span><\/p>\n<p style=\"text-align: justify;\"><strong><span style=\"font-family: verdana, geneva, sans-serif; font-size: 12pt;\">Assembling the salad:<\/span><\/strong><br \/><span style=\"font-family: verdana, geneva, sans-serif; font-size: 12pt;\">1. Gently toss all the salad ingredients together. <\/span><br \/><span style=\"font-family: verdana, geneva, sans-serif; font-size: 12pt;\">2. Just before serving, whisk the following ingredients together: mashed garlic, pomegranate molasses, lemon juice, Summaaq, and salt.<\/span><br \/><span style=\"font-family: verdana, geneva, sans-serif; font-size: 12pt;\">3. Now add the toasted pita pieces, and gradually, drizzle the olive oil over and mix gently, taking care not to break the pita too much.<\/span><\/p>\n<p style=\"text-align: justify;\"><strong><span style=\"font-family: verdana, geneva, sans-serif; font-size: 12pt;\">Important notes:<\/span><\/strong><br \/><span style=\"font-family: verdana, geneva, sans-serif; font-size: 12pt;\">\uf0d8 Step 2 and 3 should only be done as you are sitting down to eat; otherwise, the salad becomes too soggy. Alternatively, you can prepare the dressing and olive oil in separate pouring jugs and let your guests pour as they wish.<\/span><br \/><span style=\"font-family: verdana, geneva, sans-serif; font-size: 12pt;\">\uf0d8 You could add other salad vegetables too, such as carrots and red peppers, or even crumbled feta cheese.
