{"id":7464,"date":"2008-03-25T15:23:15","date_gmt":"2008-03-25T13:23:15","guid":{"rendered":"http:\/\/dev.radioislam.org.za\/wordpress\/2008\/03\/25\/keema-paratha-250308\/"},"modified":"2008-03-25T15:23:15","modified_gmt":"2008-03-25T13:23:15","slug":"keema-paratha-250308","status":"publish","type":"post","link":"https:\/\/radioislam.org.za\/a\/keema-paratha-250308\/","title":{"rendered":"Keema Paratha (25.03.08)"},"content":{"rendered":"\n<p class=\"MsoNormal\"><\/p>\n<p class=\"MsoNormal\"><o:p>&nbsp;<\/o:p><\/p>\n<p class=\"MsoNormal\">Dough:<\/p>\n<p class=\"MsoNormal\"><o:p>&nbsp;<\/o:p><\/p>\n<p class=\"MsoNormal\">4 cups flour<\/p>\n<p class=\"MsoNormal\">4 Tbsp thick ghee <\/p>\n<p class=\"MsoNormal\">+- 1 \u00bc Cups cold water<\/p>\n<p class=\"MsoNormal\">Melted ghee for basting <\/p>\n<p class=\"MsoNormal\">Flour for dusting<\/p>\n<p class=\"MsoNormal\"><o:p>&nbsp;<\/o:p><\/p>\n<ul style=\"margin-top: 0cm;\" type=\"disc\">\n<li class=\"MsoNormal\" style=\"\">Sift      flour in a mixing bowl <\/li>\n<li class=\"MsoNormal\" style=\"\">Rub      in the ghee<\/li>\n<li class=\"MsoNormal\" style=\"\">Add      water and mix<\/li>\n<li class=\"MsoNormal\" style=\"\">Knead      into a pliable dough <\/li>\n<li class=\"MsoNormal\" style=\"\">Cover      and leave dough for 1 hour<\/li>\n<li class=\"MsoNormal\" style=\"\">Knead      again <\/li>\n<li class=\"MsoNormal\" style=\"\">Divide      into 12 portions<\/li>\n<li class=\"MsoNormal\" style=\"\">Roll      out each thinly into a circle 15cm in diameter <\/li>\n<li class=\"MsoNormal\" style=\"\">Sprinkle      with flour and fold in \u00bd <\/li>\n<li class=\"MsoNormal\" style=\"\">Brush      with ghee, sprinkle with flour and fold again.<\/li>\n<li class=\"MsoNormal\" style=\"\">Fold      in from the long ends until you get a 6 cm squares<\/li>\n<li class=\"MsoNormal\" style=\"\">Dust      lightly with flour and roll out into 10cm squares.<\/li>\n<li class=\"MsoNormal\" style=\"\">Place      cold filling on each square<\/li>\n<li class=\"MsoNormal\" style=\"\">Cover      with another square and press the edges gently until sealed.<\/li>\n<li class=\"MsoNormal\" style=\"\">Toast      on a griddle while basting with ghee until both sides are cooked and      crisp.<\/li>\n<\/ul>\n<p class=\"MsoNormal\"><o:p>&nbsp;<\/o:p><\/p>\n<p class=\"MsoNormal\">Filling: 500g mince lamb \/ chicken<\/p>\n<p class=\"MsoNormal\">1 tsp crushed ginger <\/p>\n<p class=\"MsoNormal\">1 tsp crushed garlic<\/p>\n<p class=\"MsoNormal\">2 tsp garam masala<\/p>\n<p class=\"MsoNormal\">\u00bd tsp turmeric <\/p>\n<p class=\"MsoNormal\">1 tsp crushed green chillies<\/p>\n<p class=\"MsoNormal\">2 Tbsp tomato puree<\/p>\n<p class=\"MsoNormal\">\u00bd cup mixture of mint and coriander, chopped <\/p>\n<p class=\"MsoNormal\">Salt to taste.<\/p>\n<p class=\"MsoNormal\"><o:p>&nbsp;<\/o:p><\/p>\n<p class=\"MsoNormal\">Simmer mince until moisture has evaporated.<\/p>\n<p class=\"MsoNormal\">Add the remaining<span style=\"\">&nbsp;
