Beat in the oil, water, vanilla essence, egg yolks, and grated chocolate until just combined. In a separate bowl, whisk the egg whites until stiff, then fold into the flour mixture. Pour the cake batter into 22cm spring form pan lined then sprayed with non- stick cooking spray. Bake in a preheated oven at 180 for about 40 minutes Remove and place on a cooling rack to cool completely.<br \/>Topping:<br \/>Place the chocolate and cream into a small heat proof dish and microwave on medium for 2 &acirc;&euro;&ldquo; 3 minutes, until melted. Stir well until smooth.
