In a medium heat-resistant bowl, whisk yolks and sugar. Place the bowl on top of a small pan with simmering water and stir 7-8 min on low heat until the sugar has dissolved. Remove from the heat and let it cool at room temp. In a medium bowl, add mascarpone and vanilla and beat together. Pour egg mixture and whisk until well combined. In another medium bowl, beat cold heavy cream until stiff peaks form. Using a wooden spoon fold the whipped cream into the mascarpone mixture. Dip each side of the ladyfingers in the coffee mixture. Then place them into the bottom of a cup or jar to create a layer (if necessary, break the ladyfingers in half). Pipe a layer of ready cream. Then place another layer of coffee-dipped ladyfingers over the cream. Cover with plastic wrap and chill overnight.
