font-size: 12px\">\n<p><strong>Croissant Dough<\/strong><\/p>\n<p>4 cups flour sifted<br \/>1 tblsp sugar<br \/>1 pkt \/10g instant yeast<br \/>1egg, beaten<br \/>1 cup milk<br \/>1 cup water<br \/>250g butter divided into 2 parts &ndash; grated and refridgerated<\/p>\n<p><strong>Method<\/strong><br \/>&bull;&nbsp;&nbsp; &nbsp;mix salt and flour then add yeast and sugar. mix<br \/>&bull;&nbsp;&nbsp; &nbsp;heat milk and water to lukewarm or slightly warmer as it cools more when you add the egg.<br \/>&bull;&nbsp;&nbsp; &nbsp;add egg and mix well<br \/>&bull;&nbsp;&nbsp; &nbsp;make a soft dough with the liquid<br \/>&bull;&nbsp;&nbsp; &nbsp;divide into 3 parts and roll out 3 roties.<br \/>&bull;&nbsp;&nbsp; &nbsp;put &frac12; the grated butter on 1 roti and sprinkle maziena.<br \/>&bull;&nbsp;&nbsp; &nbsp;cover with the 2nd roti and put 2nd half of butter on top.<br \/>&bull;&nbsp;&nbsp; &nbsp;take care not to put grated butter again close to the edge of the rotis.<br \/>&bull;&nbsp;&nbsp; &nbsp;sprinkle maziena over the butter again and cover with the 3rd roti.<br \/>&bull;&nbsp;&nbsp; &nbsp;roll out into 1 big roti, using maziena instead of flour.<br \/>&bull;&nbsp;&nbsp; &nbsp;refridgerate for 1 hour to rise.<br \/>&bull;&nbsp;&nbsp; &nbsp;then roll out again and return to fridge. <br \/>&bull;&nbsp;&nbsp; &nbsp;repaet this process 2 more times.<br \/>&bull;&nbsp;&nbsp; &nbsp;if using the next day refridgerate.<br \/>&bull;&nbsp;&nbsp; &nbsp;roll out and cut with doughnut cutter.<br \/>&bull;&nbsp;&nbsp; &nbsp;fry on meduim heat till gollden brown.<br \/>&bull;&nbsp;&nbsp; &nbsp;turn over after a few minutes. <br \/>&bull;&nbsp;&nbsp; &nbsp;check if it&rsquo;s done. remove from oil<br \/>&bull;&nbsp;&nbsp; &nbsp;cool then slit in half horizontally and fill with vanilla cream filling.<br \/>&bull;&nbsp;&nbsp; &nbsp;replace tops.<br \/>&bull;&nbsp;&nbsp; &nbsp;make a thick water glaze and spread over.<\/p>\n<p><strong>Vanilla Cream Filling<\/strong><br \/>1 &frac12; cups full cream milk<br \/>1 tsp vanilla essence or scraped seeds and shell of a vanilla pod<br \/>3 extra large egg yolks<br \/>&frac12; cups sugar<br \/>2 tblsp maziena<br \/>2 tblsp cake flour<br \/>&frac12; cup fresh cream whipped.<\/p>\n<p><strong>Method<\/strong><br \/>&bull;&nbsp;&nbsp; &nbsp;combine milk, vanilla seeds and pod in a saucepan.<br \/>&bull;&nbsp;&nbsp; &nbsp;if using vanilla essence do not add now.<br \/>&bull;&nbsp;&nbsp; &nbsp;bring to boil.<br \/>&bull;&nbsp;&nbsp; &nbsp;remove from heat<br \/>&bull;&nbsp;&nbsp; &nbsp;beat in egg yolks, sugar, maziena and flour together until light and creamy.<br \/>&bull;&nbsp;&nbsp; &nbsp;remove vanilla pod\/if using <br \/>&bull;&nbsp;&nbsp; &nbsp;beat milk into egg mixture.<br \/>&bull;&nbsp;&nbsp; &nbsp;do not add egg mixture to milk as it may curdle.<br \/>&bull;&nbsp;&nbsp; &nbsp;return mixture to saucepan and cook over meduim heat till it begins to boil and thicken.<br \/>&bull;&nbsp;&nbsp; &nbsp;remove from heat.<br \/>&bull;&nbsp;&nbsp; &nbsp;now add the vanilla essence and mix well.<br \/>&bull;&nbsp;&nbsp; &nbsp;cover with plastic wrap\/glad wrap, allowing it to touch the filling completely, so the skin doesn&rsquo;t form.<br \/>&bull;&nbsp;&nbsp; &nbsp;allow to cool.<br \/>&bull;&nbsp;&nbsp; &nbsp;beat fresh cream and fold in.<br \/>&bull;&nbsp;&nbsp;
