{"id":8124,"date":"2012-08-14T08:33:08","date_gmt":"2012-08-14T06:33:08","guid":{"rendered":"http:\/\/dev.radioislam.org.za\/wordpress\/2012\/08\/14\/peri-peri-chicken-roast\/"},"modified":"2012-08-14T08:33:08","modified_gmt":"2012-08-14T06:33:08","slug":"peri-peri-chicken-roast","status":"publish","type":"post","link":"https:\/\/radioislam.org.za\/a\/peri-peri-chicken-roast\/","title":{"rendered":"Peri peri chicken roast"},"content":{"rendered":"<p><\/p>\n<div align=\"justify\" style=\"font-family: Verdana,Arial,Helvetica,sans-serif; font-size: 12px\">INGREDIENTS<br \/>1 chicken cut into half\/ butter flied<br \/>1 tsp chilli garlic paste<br \/>1 tsp red chillies<br \/>1 tsp pepper steak spice<br \/>1 tsp crushed jeeru<br \/>1 tsp salt<br \/>2 tblsp tomato paste<br \/>1 &frac12; tblsp peri peri oil<br \/>&frac14; cup lemon juice<br \/>&frac14; cup ghee or olive oil<\/p>\n<p>SAUCE<br \/>&frac12; cup tomato puree<br \/>3 tbslp lemon juice<br \/>&frac12; tsp peri peri spice<br \/>Salt to taste<br \/>Left over marinade<br \/>Ghee used for frying<br \/>METHOD<br \/>Cut chicken into half\/butterfly. Wash and drain.<br \/>Combine spices with tomato paste, peri peri oil, lemon juice and marinate the chicken. Leave for 3 to 4 hours. <\/p>\n<p>THEN<br \/>Heat ghee in a large frying pan and fry the chicken. Remove the chicken from the ghee and leave aside.<\/p>\n<p>Combine the sauce ingredients together and add the left over marinade and ghee. Pour over the sauce mixture and place in an oven tray. Cover with foil. Bake @180c for 30 minutes.
