{"id":8184,"date":"2007-08-31T07:53:17","date_gmt":"2007-08-31T05:53:17","guid":{"rendered":"http:\/\/dev.radioislam.org.za\/wordpress\/2007\/08\/31\/meat-biryani\/"},"modified":"2007-08-31T07:53:17","modified_gmt":"2007-08-31T05:53:17","slug":"meat-biryani","status":"publish","type":"post","link":"https:\/\/radioislam.org.za\/a\/meat-biryani\/","title":{"rendered":"Meat biryani"},"content":{"rendered":"<p> <font face=\"Verdana, Arial, Helvetica, sans-serif\"> <\/font><\/p>\n<div align=\"justify\"><font face=\"Verdana, Arial, Helvetica, sans-serif\"><\/p>\n<p align=\"center\"><a target=\"_blank\" rel=\"noopener noreferrer\"><font face=\"Verdana, Arial, Helvetica, sans-serif\" size=\"-1\">  <\/font><\/a><\/p>\n<p><\/font><\/p>\n<div align=\"justify\"><font face=\"Verdana, Arial, Helvetica, sans-serif\">  <\/font><font face=\"Verdana, Arial, Helvetica, sans-serif\"><\/p>\n<p><font size=\"-1\">   <strong>Meat Sauce<\/strong><\/font><\/p>\n<p><font size=\"-1\">2 onions finely chopped plus oil to saute onions<\/font><\/p>\n<p><\/font><br \/><font face=\"Verdana, Arial, Helvetica, sans-serif\"><\/p>\n<p><font size=\"-1\">   1kg meat, washed trimmed and drained<\/font><\/p>\n<p><\/font><br \/><font face=\"Verdana, Arial, Helvetica, sans-serif\"><\/p>\n<p><font size=\"-1\">   20ml garlic and ginger<\/font><\/p>\n<p><\/font><br \/><font face=\"Verdana, Arial, Helvetica, sans-serif\"><\/p>\n<p><font size=\"-1\">   2 green chillies<\/font><\/p>\n<p><\/font><br \/><font face=\"Verdana, Arial, Helvetica, sans-serif\"><\/p>\n<p><font size=\"-1\">   2 pieces of stick cinnamon<\/font><\/p>\n<p><\/font><br \/><font face=\"Verdana, Arial, Helvetica, sans-serif\"><\/p>\n<p><font size=\"-1\">   3 cardamon pods<\/font><\/p>\n<p><\/font><br \/><font face=\"Verdana, Arial, Helvetica, sans-serif\"><\/p>\n<p><font size=\"-1\">   3 whole cloves<\/font><\/p>\n<p><\/font><br \/><font face=\"Verdana, Arial, Helvetica, sans-serif\"><\/p>\n<p><font size=\"-1\">   3 all spice berries<\/font><\/p>\n<p><\/font><br \/><font face=\"Verdana, Arial, Helvetica, sans-serif\"><\/p>\n<p><font size=\"-1\">   30ml ground coriander<\/font><\/p>\n<p><\/font><br \/><font face=\"Verdana, Arial, Helvetica, sans-serif\"><\/p>\n<p><font size=\"-1\">   15ml turmeric<\/font><\/p>\n<p><\/font><br \/><font face=\"Verdana, Arial, Helvetica, sans-serif\"><\/p>\n<p><font size=\"-1\">   10ml fine cumin<\/font><\/p>\n<p><\/font><br \/><font face=\"Verdana, Arial, Helvetica, sans-serif\"><\/p>\n<p><font size=\"-1\">   10ml fine fennel\/somph<\/font><\/p>\n<p><\/font><br \/><font face=\"Verdana, Arial, Helvetica, sans-serif\"><\/p>\n<p><font size=\"-1\">   15ml chilli powder<\/font><\/p>\n<p><\/font><br \/><font face=\"Verdana, Arial, Helvetica, sans-serif\"><\/p>\n<p><font size=\"-1\">   1 large tomato grated<\/font><\/p>\n<p><\/font><br \/><font face=\"Verdana, Arial, Helvetica, sans-serif\"><\/p>\n<p><font size=\"-1\">   250ml yoghurt<\/font><\/p>\n<p><\/font><br \/><font face=\"Verdana, Arial, Helvetica, sans-serif\"><\/p>\n<p><font size=\"-1\">   1 bunch fresh coriander chopped<\/font><\/p>\n<p><\/font><br \/><font face=\"Verdana, Arial, Helvetica, sans-serif\"><\/p>\n<p><font size=\"-1\">   5ml saffron soaked in boiling water<\/font><\/p>\n<p><\/font><br \/><font face=\"Verdana, Arial, Helvetica, sans-serif\"><\/p>\n<p><font size=\"-1\">   250ml crispy friend onions, well golden<\/font><\/p>\n<p><\/font><br \/><font face=\"Verdana, Arial, Helvetica, sans-serif\"><\/p>\n<p><font size=\"-1\">   125ml cooked lentils, kept aside(masoor)<\/font><\/p>\n<p><\/font><br \/><font face=\"Verdana, Arial, Helvetica, sans-serif\"><\/p>\n<p><font size=\"-1\">   125ml melted butter<\/font><\/p>\n<p><\/font><br \/><font face=\"Verdana, Arial, Helvetica, sans-serif\"><\/p>\n<p><font size=\"-1\">   14 small potatoes, fried in oil<\/font><\/p>\n<p><font size=\"-1\"><strong>Method<\/strong><\/font><\/p>\n<p><font size=\"-1\">1. Heat oil in large pot and then add onions and saute    until golden. Add meat, ginger and garlic and saute for 20 mins ass water    if necessary.<\/font><\/p>\n<p><\/font><br \/><font face=\"Verdana, Arial, Helvetica, sans-serif\"><\/p>\n<p><font size=\"-1\">   2. Add all spices and tomato and cook till soft, lastly add yoghurt and fresh    coriander. Cook for a further 10 mins until sauce is reduced.<\/font><\/p>\n<p><font size=\"-1\"><strong>The Rice<\/strong><\/font><\/p>\n<p><font size=\"-1\">Boli 4 cups rice with 2 sticks cinnamon, 3 cloves, 3 all spice    berries, 3 cardamom pods, 60ml oil,20ml salt in 2 liters water until rice is &frac34; done. Rice must not be very soft. Drain.<\/font><\/p>\n<p><font size=\"-1\"><strong>To Assemble<\/strong><\/font><\/p>\n<p><font size=\"-1\">Using a pyrex, place a layer of rice at the bottom, then a    layer of meat sauce, followed by potatoes, lentils and fried onions. Repeat    the process until all rice and meat is used ending off with rice. Sprinkle the    top with saffron water, melted butter, lentils and onions.
