{"id":8202,"date":"2008-12-04T15:29:25","date_gmt":"2008-12-04T13:29:25","guid":{"rendered":"http:\/\/dev.radioislam.org.za\/wordpress\/2008\/12\/04\/bitrani-041208\/"},"modified":"2008-12-04T15:29:25","modified_gmt":"2008-12-04T13:29:25","slug":"bitrani-041208","status":"publish","type":"post","link":"https:\/\/radioislam.org.za\/a\/bitrani-041208\/","title":{"rendered":"Bitrani (04.12.08)"},"content":{"rendered":"\n<p style=\"text-align: justify\" class=\"MsoNormal\"><span style=\"font-size: 11pt; font-family: Verdana\">1 large chicken-disjointed + washed<\/span><\/p>\n<p style=\"text-align: justify\" class=\"MsoNormal\"><span style=\"font-size: 11pt; font-family: Verdana\">1 cup masoor &ndash; boiled in salt water + drained<\/span><\/p>\n<p style=\"text-align: justify\" class=\"MsoNormal\"><span style=\"font-size: 11pt; font-family: Verdana\">3 cups rice &ndash; boiled &ndash; only half done<\/span><\/p>\n<p style=\"text-align: justify\" class=\"MsoNormal\"><span style=\"font-size: 11pt; font-family: Verdana\">2 pieces taj (cinnamon sticks)<\/span><\/p>\n<p style=\"text-align: justify\" class=\"MsoNormal\"><span style=\"font-size: 11pt; font-family: Verdana\">2-3 whole elachi (cardamom)<\/span><\/p>\n<p style=\"text-align: justify\" class=\"MsoNormal\"><span style=\"font-size: 11pt; font-family: Verdana\">teaspoon whole jeeru<\/span><\/p>\n<p style=\"text-align: justify\" class=\"MsoNormal\"><span style=\"font-size: 11pt; font-family: Verdana\">2-3 whole green chillies<\/span><\/p>\n<p style=\"text-align: justify\" class=\"MsoNormal\"><span style=\"font-size: 11pt; font-family: Verdana\">1 cup yogurt \/ maas<\/span><\/p>\n<p style=\"text-align: justify\" class=\"MsoNormal\"><span style=\"font-size: 11pt; font-family: Verdana\">2 tomatoes &ndash; grated \/ liquidized<\/span><\/p>\n<p style=\"text-align: justify\" class=\"MsoNormal\"><span style=\"font-size: 11pt; font-family: Verdana\">Juice of 1 lemon<\/span><\/p>\n<p style=\"text-align: justify\" class=\"MsoNormal\"><span style=\"font-size: 11pt; font-family: Verdana\">&frac14; teasp saffron &ndash; soaked in 1 cup water<\/span><\/p>\n<p style=\"text-align: justify\" class=\"MsoNormal\"><span style=\"font-size: 11pt; font-family: Verdana\">&frac14; teasp arad (turmeric)<\/span><\/p>\n<p style=\"text-align: justify\" class=\"MsoNormal\"><span style=\"font-size: 11pt; font-family: Verdana\">Salt to taste<\/span><\/p>\n<p style=\"text-align: justify\" class=\"MsoNormal\"><span style=\"font-size: 11pt; font-family: Verdana\">2 teasp dhana \/ jeeru<\/span><\/p>\n<p style=\"text-align: justify\" class=\"MsoNormal\"><span style=\"font-size: 11pt; font-family: Verdana\">Red chillies if required \/ to taste<\/span><\/p>\n<p style=\"text-align: justify\" class=\"MsoNormal\"><span style=\"font-size: 11pt; font-family: Verdana\">3 medium potatoes &ndash; cut in halves and fried, light yellow in colour<\/span><\/p>\n<p style=\"text-align: justify\" class=\"MsoNormal\"><span style=\"font-size: 11pt; font-family: Verdana\">3 eggs boiled<\/span><\/p>\n<p style=\"text-align: justify\" class=\"MsoNormal\"><span style=\"font-size: 11pt; font-family: Verdana\">&frac34; cup oil<\/span><\/p>\n<p style=\"text-align: justify\" class=\"MsoNormal\"><span style=\"font-size: 11pt; font-family: Verdana\">3 onions &ndash; sliced + fried to a pale golden colour, drain + crush lightly<\/span><\/p>\n<p style=\"text-align: justify\" class=\"MsoNormal\"><span style=\"font-size: 11pt; font-family: Verdana\">1 cup frozen green peas. Optional<\/span><\/p>\n<p style=\"text-align: justify\" class=\"MsoNormal\"><span style=\"font-size: 11pt; font-family: Verdana\">1&frac12; \/2 tablesp red ginger \/ garlic masala<\/span><\/p>\n<p style=\"text-align: justify\" class=\"MsoNormal\"><span style=\"font-size: 11pt; font-family: Verdana\">1 tsp of crushed garlic<\/span><\/p>\n<p style=\"text-align: justify\" class=\"MsoNormal\"><span style=\"font-size: 11pt; font-family: Verdana\">&nbsp;<\/span><\/p>\n<p style=\"text-align: justify\" class=\"MsoNormal\"><span style=\"font-size: 11pt; font-family: Verdana\">Method<\/span>:<\/p>\n<p style=\"text-align: justify\" class=\"MsoNormal\"><span style=\"font-size: 11pt; font-family: Verdana\">Place chicken in a large bowl.<\/span>&nbsp;<\/p>\n<p style=\"text-align: justify\" class=\"MsoNormal\"><span style=\"font-size: 11pt; font-family: Verdana\">Leave a &frac12; cup of soaked saffron water, and a tablespoon of fried onions aside.<\/span><\/p>\n<p style=\"text-align: justify\" class=\"MsoNormal\"><span style=\"font-size: 11pt; font-family: Verdana\">Add ginger \/ garlic, yogurt, spices, salt, green chillies, tomatoes, lemon juice, tuj + elachi + crushed fried onions to chicken + marinade for atleast an hour.<\/span><\/p>\n<p style=\"text-align: justify\" class=\"MsoNormal\"><span style=\"font-size: 11pt; font-family: Verdana\">In a large flat bottom pot put in oil that was used for frying onions. Sprinkle a handful of masoor + rice over the bottom.<\/span><\/p>\n<p style=\"text-align: justify\" class=\"MsoNormal\"><span style=\"font-size: 11pt; font-family: Verdana\">Arrange the marinated chicken with masala&rsquo;s carefully over the bottom of pot.<\/span><\/p>\n<p style=\"text-align: justify\" class=\"MsoNormal\"><span style=\"font-size: 11pt; font-family: Verdana\">Spread masoor over chicken, then the potatoes, the frozen peas + then half the rice.<\/span><\/p>\n<p style=\"text-align: justify\" class=\"MsoNormal\"><span style=\"font-size: 11pt; font-family: Verdana\">Place eggs over the rice. <\/span><\/p>\n<p style=\"text-align: justify\" class=\"MsoNormal\"><span style=\"font-size: 11pt; font-family: Verdana\">Spread the rest of the rice over the eggs.<\/span><\/p>\n<p style=\"text-align: justify\" class=\"MsoNormal\"><span style=\"font-size: 11pt; font-family: Verdana\">Decorate with left over fried onions + greens peas. <\/span><\/p>\n<p style=\"text-align: justify\" class=\"MsoNormal\"><span style=\"font-size: 11pt; font-family: Verdana\">Add &frac12; cup water to saffron water + sprinkle over the top.<\/span><\/p>\n<p style=\"text-align: justify\" class=\"MsoNormal\"><span style=\"font-size: 11pt; font-family: Verdana\">Close + seal lid of pot tightly. Place over high heat for about 5 minutes until it. starts sizzling. At this stage pot can be transferred to preheated oven of 180c + left to cook for an hour. or <\/span><\/p>\n<p style=\"text-align: justify\" class=\"MsoNormal\"><span style=\"font-size: 11pt; font-family: Verdana\">Lower heat + allow pot to simmer for hour. <\/span><\/p>\n<p style=\"text-align: justify\" class=\"MsoNormal\"><span style=\"font-size: 11pt; font-family: Verdana\">By this time all moisture should have evaporated.<\/span><\/p>\n<p style=\"text-align: justify\" class=\"MsoNormal\"><span style=\"font-size: 11pt; font-family: Verdana\">Serve with fried papar + papri, onion kachomars the very essential spiced dahi. Spiced pahi. Spiced Dahi. Add 2 teasp green dhunia chutney + salt to taste to 1 box (500ml) of sour milk. Whisk + serve in individual bowls. For mutton add 1 more teasp of ginger \/ garlic masala + &frac12; cup more of sour milk. Allow marinated meat to cook for about &frac12; hour before arranging the pot &ndash; depending on the toughness of the meat<\/span><\/p>\n<p style=\"text-align: justify\" class=\"MsoNormal\"><span style=\"font-size: 11pt; font-family: Verdana\">&nbsp;<\/span><\/p>\n<p style=\"text-align: justify\" class=\"MsoNormal\"><span style=\"font-size: 11pt; font-family: Verdana\">&nbsp;<br \/><span>&nbsp;<\/span>!!!
