{"id":8215,"date":"2012-10-18T13:21:39","date_gmt":"2012-10-18T11:21:39","guid":{"rendered":"http:\/\/dev.radioislam.org.za\/wordpress\/2012\/10\/18\/chicken-biryani-recipe-171012\/"},"modified":"2012-10-18T13:21:39","modified_gmt":"2012-10-18T11:21:39","slug":"chicken-biryani-recipe-171012","status":"publish","type":"post","link":"https:\/\/radioislam.org.za\/a\/chicken-biryani-recipe-171012\/","title":{"rendered":"Chicken Biryani Recipe (17.10.12)"},"content":{"rendered":"<p>&nbsp;<\/p>\n<p><em>COURTESY OF MIRIAM VALLY &ndash; AUTHOR OF THE PRIDE OF INDIAN COOKING<\/em><\/p>\n<p>&nbsp;<\/p>\n<ol>\n<li>2 large onions &ndash;fried crispy and crushed<\/li>\n<li>2 large tomato &#8211; liquidized<\/li>\n<li>&frac12; carton sour milk &ndash; 1 &frac12; cups<\/li>\n<li>&frac12; cup oil or ghee<\/li>\n<li>2 cups rice &ndash; boiled half done with 1 dessertspoon rough salt and spices i.e., cinnamon, elachi cloves etc&hellip;<\/li>\n<li>&frac12; cup masoor preboiled<\/li>\n<li>1 &frac12; cups frozen peas<\/li>\n<li>3 eggs boiled optional<\/li>\n<li>3 medium potatoes &ndash; sliced in 6 and fried<\/li>\n<\/ol>\n<p align=\"justify\"><strong>USE THE FOLLOWING INGREDIENTS TO MAKE MASALA MIXTURE<\/strong><\/p>\n<ol>\n<li>Spices &ndash; a few elachi, cinnamon, cloves peppercorns<\/li>\n<li>1 &frac12; heaped dessertspoons red ginger garlic masala<\/li>\n<li>1 02 dessertspoons red course dry chilies for a stronger flavor<\/li>\n<li>2 level dessertspoons fine dhania powder<\/li>\n<li>2 level dessertspoons whole jeero<\/li>\n<li>2 level dessertspoons rough salt or as required<\/li>\n<li>1 tsp arad<\/li>\n<li>1 tsp egg yellow &ndash; mix a little water<\/li>\n<li>3 dessertspoons saffron water &ndash; a few strands saffron boiled<\/li>\n<li>4 whole green chillies<\/li>\n<li>&frac12; bunch green dhania chopped<\/li>\n<li>2 level dessertspoons butter. Ghee or oil<\/li>\n<li>Juice of 1 lemon<\/li>\n<li>1 chicken disjointed<\/li>\n<\/ol>\n<p align=\"justify\"><strong>METHOD<\/strong><\/p>\n<ul>\n<li>Add all the ingredients to a dish and mix well.<\/li>\n<li>Add masala paste\/mixture to chicken and rub well. It can be marinated overnight or for a few hours before cooking biryani<\/li>\n<li>Add crushed onions, tomatoe and sour milk. Add &frac12; cup oil or melted ghee to the pot.<\/li>\n<li>Sprinkle 1 cup rice over oil and a handful of masoor and peas over rice.<\/li>\n<li>Add chicken pieces with mixture spread evenly.<\/li>\n<li>Add masoor and peas over the chicken. Lay eggs out and potatoes.<\/li>\n<li>Cover with remaining rice.
