{"id":8216,"date":"2013-01-17T05:09:05","date_gmt":"2013-01-17T03:09:05","guid":{"rendered":"http:\/\/dev.radioislam.org.za\/wordpress\/2013\/01\/17\/bukhari-rice-17012013\/"},"modified":"2013-01-17T05:09:05","modified_gmt":"2013-01-17T03:09:05","slug":"bukhari-rice-17012013","status":"publish","type":"post","link":"https:\/\/radioislam.org.za\/a\/bukhari-rice-17012013\/","title":{"rendered":"Bukhari rice (17.01.2013)"},"content":{"rendered":"<p>INGREDIENTS<br \/>1 chicken cut and washed<br \/>&nbsp;1 big onion, chopped<br \/>&frac34; cup ghee or oil<br \/>1 tsp cumin seeds &#8211; jeera<br \/>5 cardomom seeds &ndash; elachi<br \/>5 peppercorns<br \/>3 pieces cinnamon<br \/>2 cups chopped tomatoes<br \/>3 cups carrots cut into strips<br \/>&frac14; cup ground coriander &#8211; dhania seeds<br \/>1 tbslp ground ginger<br \/>1 tsp crushed garlic<br \/>2 chopped green chillies<br \/>4 &frac12; cups boiling water<br \/>3 tsps salt<br \/>3 &frac12; cups Basmati Rice<br \/>&frac14; cup ghee<br \/>2 tblps chopped almonds<br \/>2 tblps sultanas<\/p>\n<p>METHOD<br \/>1. Place onions, ghee, cumin,cardamom,pepper and cinnamon in a pot and braise until onions turn a light brown<br \/>2. Add the chicken and &frac14; cup water. Cook over medium heat and braise for a few minutes<br \/>3. Add the tomatoes, carrots, coriander, ginger, garlic, and chillies, then cook for 5-7 minutes, or until thick gravy forms<br \/>4. Pour over the boiling water, add the salt and bring to rapid boil<br \/>5. Add the rice and stir well. Close tightly with the lid and cook over medium heat until water burns out, about 5 -10 minutes. Reduce&nbsp; heat and steam until cooked<br \/>6. Place the ghee and almonds in a pan. Fry over until almonds have browned lightly.
