{"id":8369,"date":"2010-08-10T16:51:34","date_gmt":"2010-08-10T14:51:34","guid":{"rendered":"http:\/\/dev.radioislam.org.za\/wordpress\/2010\/08\/10\/pastry-bags-with-mushroom-and-steak-10082010\/"},"modified":"2010-08-10T16:51:34","modified_gmt":"2010-08-10T14:51:34","slug":"pastry-bags-with-mushroom-and-steak-10082010","status":"publish","type":"post","link":"https:\/\/radioislam.org.za\/a\/pastry-bags-with-mushroom-and-steak-10082010\/","title":{"rendered":"Pastry Bags with Mushroom and Steak (10.08.2010)"},"content":{"rendered":"\n<p style=\"text-align: justify\" class=\"MsoNormal\"><span style=\"font-size: 11pt; font-family: Verdana\"><br \/><\/span><\/p>\n<p style=\"text-align: justify\" class=\"MsoNormal\"><span style=\"font-size: 11pt; font-family: Verdana\">&nbsp;<\/span><\/p>\n<p style=\"text-align: justify\" class=\"MsoNormal\"><span style=\"font-size: 11pt; font-family: Verdana\">250g flour<\/span><\/p>\n<p style=\"text-align: justify\" class=\"MsoNormal\"><span style=\"font-size: 11pt; font-family: Verdana\">Salt to taste<\/span><\/p>\n<p style=\"text-align: justify\" class=\"MsoNormal\"><span style=\"font-size: 11pt; font-family: Verdana\">250g margarine <\/span><\/p>\n<p style=\"text-align: justify\" class=\"MsoNormal\"><span style=\"font-size: 11pt; font-family: Verdana\">250g smooth cottage cheese<\/span><\/p>\n<p style=\"text-align: justify\" class=\"MsoNormal\"><span style=\"font-size: 11pt; font-family: Verdana\">&nbsp;<\/span><\/p>\n<p style=\"text-align: justify\" class=\"MsoNormal\"><span style=\"font-size: 11pt; font-family: Verdana\">Filling<\/span><\/p>\n<p style=\"text-align: justify\" class=\"MsoNormal\"><span style=\"font-size: 11pt; font-family: Verdana\">30ml butter<\/span><\/p>\n<p style=\"text-align: justify\" class=\"MsoNormal\"><span style=\"font-size: 11pt; font-family: Verdana\">1 medium onion, finely chopped<\/span><\/p>\n<p style=\"text-align: justify\" class=\"MsoNormal\"><span style=\"font-size: 11pt; font-family: Verdana\">300g steak, washed and drained, cut into small cubes<\/span><\/p>\n<p style=\"text-align: justify\" class=\"MsoNormal\"><span style=\"font-size: 11pt; font-family: Verdana\">4 large brown mushrooms<\/span><\/p>\n<p style=\"text-align: justify\" class=\"MsoNormal\"><span style=\"font-size: 11pt; font-family: Verdana\">3 pepper dew&rsquo;s, finely chopped <\/span><\/p>\n<p style=\"text-align: justify\" class=\"MsoNormal\"><span style=\"font-size: 11pt; font-family: Verdana\">5ml ginger garlic paste<\/span><\/p>\n<p style=\"text-align: justify\" class=\"MsoNormal\"><span style=\"font-size: 11pt; font-family: Verdana\">10ml ground coriander <\/span><\/p>\n<p style=\"text-align: justify\" class=\"MsoNormal\"><span style=\"font-size: 11pt; font-family: Verdana\">5ml paprika <\/span><\/p>\n<p style=\"text-align: justify\" class=\"MsoNormal\"><span style=\"font-size: 11pt; font-family: Verdana\">10ml barbeque spice<\/span><\/p>\n<p style=\"text-align: justify\" class=\"MsoNormal\"><span style=\"font-size: 11pt; font-family: Verdana\">100ml finely chopped coriander leaves<\/span><\/p>\n<p style=\"text-align: justify\" class=\"MsoNormal\"><span style=\"font-size: 11pt; font-family: Verdana\">&nbsp;<\/span><\/p>\n<p style=\"text-align: justify\" class=\"MsoNormal\"><span style=\"font-size: 11pt; font-family: Verdana\">Topping:<\/span><\/p>\n<p style=\"text-align: justify\" class=\"MsoNormal\"><span style=\"font-size: 11pt; font-family: Verdana\">Sesame and poppy seeds <\/span><\/p>\n<p style=\"text-align: justify\" class=\"MsoNormal\"><span style=\"font-size: 11pt; font-family: Verdana\">Beaten egg<\/span><\/p>\n<p style=\"text-align: justify\" class=\"MsoNormal\"><span style=\"font-size: 11pt; font-family: Verdana\">&nbsp;<\/span><\/p>\n<p style=\"text-align: justify\" class=\"MsoNormal\"><span style=\"font-size: 11pt; font-family: Verdana\">Pastry:<\/span><\/p>\n<p style=\"text-align: justify\" class=\"MsoNormal\"><span style=\"font-size: 11pt; font-family: Verdana\">Sift flour and salt together. Cut margarine into small blocks and using fingers, rub margarine into flour until mixture resembles fine breadcrumbs. Mix cottage cheese into flour mixture. Turn out onto blended dough is formed, taking care not to over &ndash; handle. Wrap in plastic and chill for a few hours.<\/span><\/p>\n<p style=\"text-align: justify\" class=\"MsoNormal\"><span style=\"font-size: 11pt; font-family: Verdana\">&nbsp;<\/span><\/p>\n<p style=\"text-align: justify\" class=\"MsoNormal\"><span style=\"font-size: 11pt; font-family: Verdana\">Roll dough out in one direction, then fold. Roll and fold again a couple of times, allowing dough to rest in between.<\/span><\/p>\n<p style=\"text-align: justify\" class=\"MsoNormal\"><span style=\"font-size: 11pt; font-family: Verdana\">&nbsp;<\/span><\/p>\n<p style=\"text-align: justify\" class=\"MsoNormal\"><span style=\"font-size: 11pt; font-family: Verdana\">Filling:<\/span><\/p>\n<p style=\"text-align: justify\" class=\"MsoNormal\"><span style=\"font-size: 11pt; font-family: Verdana\">Melt butter and saut&eacute; onion. Add meat and braise in pot for 12 &ndash; 15 minutes, tossing continuously. Add a little water cook for 2-5 minutes, adds mushrooms and pepper dews, continue to cook for another 3-5 minutes. Add all spices and cook till meat is soft. Stir in coriander and set aside to cool.<\/span><\/p>\n<p style=\"text-align: justify\" class=\"MsoNormal\"><span style=\"font-size: 11pt; font-family: Verdana\">&nbsp;<\/span><\/p>\n<p style=\"text-align: justify\" class=\"MsoNormal\"><span style=\"font-size: 11pt; font-family: Verdana\">To assemble:<br \/> Preheat oven to 200C. roll out dough to 3cm thickness and using a 7cm diameter round cutter, cut out pastry rounds. Moisten edges lightly with beaten egg and place some filling in centre of each pastry round. Pinch the pastry closed at the top, creating a bag, twist top to ensure it is sealed properly. Brush with beaten egg and sprinkle with sesame and poppy seeds.
