{"id":8462,"date":"2007-09-04T02:53:51","date_gmt":"2007-09-04T00:53:51","guid":{"rendered":"http:\/\/dev.radioislam.org.za\/wordpress\/2007\/09\/04\/kashmiri-lamb-kofta\/"},"modified":"2007-09-04T02:53:51","modified_gmt":"2007-09-04T00:53:51","slug":"kashmiri-lamb-kofta","status":"publish","type":"post","link":"https:\/\/radioislam.org.za\/a\/kashmiri-lamb-kofta\/","title":{"rendered":"Kashmiri lamb kofta"},"content":{"rendered":"<div align=\"justify\"> <\/div>\n<p align=\"justify\"><strong><font color=\"#0000ff\"><u>Ingredients<\/u><\/font><\/strong><\/p>\n<div align=\"justify\"> <\/div>\n<p align=\"justify\">750 grams mince<br \/>   2 teaspoons ground cumin<br \/>   2 teaspoons ground coriander<br \/>   2 teaspoons garam masala<br \/>   1 teaspoon chilli powder<br \/>   &frac12; teaspoon ground tumeric<br \/>   4 cloves garlic, crushed<br \/>   2 teaspoons fresh ginger<br \/>   160 ml yogurt<br \/>   2 tablespoons ghee<br \/>   1 large onion chopped<br \/>   2 tablespoons full cream milk powder<br \/>   2 tablespoons ground almonds<br \/>   1 teaspoon sugar<br \/>   1 &frac12; cups hot water<br \/>   80 ml yogurt (extra)<\/p>\n<div align=\"justify\"> <\/div>\n<p align=\"justify\"><font color=\"#0000ff\"><strong><u>Method<\/u><\/strong><\/font><\/p>\n<div align=\"justify\"> <\/div>\n<p align=\"justify\">1. Combine spices in small bowl<br \/>   2. Combine the mince, garlic, ginger, 1 tablespoon of the yogurt and half of    the spice mixture in large bowl. Using floured hands, roll tablespoons of mince    mixture into kofta.<br \/>   3. Heat ghee in large pan, braise onion, stirring until browned lightly. Add    remaining spice mixture, cook &#8211; stirring until fragrant. Gradually add the remaining    yogurt, milk powder, nuts, sugar and water. Bring to boil then simmer uncovered    for 5 minutes, stirring occasionally, or until mixture thickens slightly.<br \/>   4. Add kofta, cover, simmer for 10 minutes. Remove cover simmer till kofta&acirc;&euro;&trade;s    are cooked and sauce is thickened.<br \/>   5.
