{"id":8523,"date":"2009-02-03T15:02:00","date_gmt":"2009-02-03T13:02:00","guid":{"rendered":"http:\/\/dev.radioislam.org.za\/wordpress\/2009\/02\/03\/moroccan-lamb-030209\/"},"modified":"2009-02-03T15:02:00","modified_gmt":"2009-02-03T13:02:00","slug":"moroccan-lamb-030209","status":"publish","type":"post","link":"https:\/\/radioislam.org.za\/a\/moroccan-lamb-030209\/","title":{"rendered":"Moroccan Lamb (03.02.09)"},"content":{"rendered":"\n<p style=\"text-align: justify\" class=\"MsoNormal\"><span style=\"font-size: 11pt; font-family: Verdana\"><br \/><\/span><\/p>\n<p style=\"text-align: justify\" class=\"MsoNormal\"><span style=\"font-size: 11pt; font-family: Verdana\">&nbsp;<\/span><\/p>\n<p style=\"text-align: justify\" class=\"MsoNormal\"><span style=\"font-size: 11pt; font-family: Verdana\">1 tsp cayenne pepper<\/span><\/p>\n<p style=\"text-align: justify\" class=\"MsoNormal\"><span style=\"font-size: 11pt; font-family: Verdana\">2 tsp ground black pepper<\/span><\/p>\n<p style=\"text-align: justify\" class=\"MsoNormal\"><span style=\"font-size: 11pt; font-family: Verdana\">1 &frac12; tsp paprika<\/span><\/p>\n<p style=\"text-align: justify\" class=\"MsoNormal\"><span style=\"font-size: 11pt; font-family: Verdana\">1 &frac12; tsp ground ginger<\/span><\/p>\n<p style=\"text-align: justify\" class=\"MsoNormal\"><span style=\"font-size: 11pt; font-family: Verdana\">1 tsp turmeric<\/span><\/p>\n<p style=\"text-align: justify\" class=\"MsoNormal\"><span style=\"font-size: 11pt; font-family: Verdana\">2 tsp ground cinnamon<\/span><\/p>\n<p style=\"text-align: justify\" class=\"MsoNormal\"><span style=\"font-size: 11pt; font-family: Verdana\">1 shoulder lamb, trimmed and cut into 5cm chunks <\/span><\/p>\n<p style=\"text-align: justify\" class=\"MsoNormal\"><span style=\"font-size: 11pt; font-family: Verdana\">2 large onions grated <\/span><\/p>\n<p style=\"text-align: justify\" class=\"MsoNormal\"><span style=\"font-size: 11pt; font-family: Verdana\">3 tbsp olive oil<\/span><\/p>\n<p style=\"text-align: justify\" class=\"MsoNormal\"><span style=\"font-size: 11pt; font-family: Verdana\">3 cloves of garlic crushed<\/span><\/p>\n<p style=\"text-align: justify\" class=\"MsoNormal\"><span style=\"font-size: 11pt; font-family: Verdana\">570ml tomato juice<\/span><\/p>\n<p style=\"text-align: justify\" class=\"MsoNormal\"><span style=\"font-size: 11pt; font-family: Verdana\">2x 400g tins chopped tomatoes<\/span><\/p>\n<p style=\"text-align: justify\" class=\"MsoNormal\"><span style=\"font-size: 11pt; font-family: Verdana\">115g dried apricots, cut in &frac12; <\/span><\/p>\n<p style=\"text-align: justify\" class=\"MsoNormal\"><span style=\"font-size: 11pt; font-family: Verdana\">55g dates cut in &frac12;<\/span><\/p>\n<p style=\"text-align: justify\" class=\"MsoNormal\"><span style=\"font-size: 11pt; font-family: Verdana\">55g sultanas or raisins<\/span><\/p>\n<p style=\"text-align: justify\" class=\"MsoNormal\"><span style=\"font-size: 11pt; font-family: Verdana\">85g flaked almonds<\/span><\/p>\n<p style=\"text-align: justify\" class=\"MsoNormal\"><span style=\"font-size: 11pt; font-family: Verdana\">1 tsp saffron soaked in cold water<\/span><\/p>\n<p style=\"text-align: justify\" class=\"MsoNormal\"><span style=\"font-size: 11pt; font-family: Verdana\">600ml veg stock<\/span><\/p>\n<p style=\"text-align: justify\" class=\"MsoNormal\"><span style=\"font-size: 11pt; font-family: Verdana\">1 tbsp honey <\/span><\/p>\n<p style=\"text-align: justify\" class=\"MsoNormal\"><span style=\"font-size: 11pt; font-family: Verdana\">2 tbsp coriander roughly chopped<\/span><\/p>\n<p style=\"text-align: justify\" class=\"MsoNormal\"><span style=\"font-size: 11pt; font-family: Verdana\">2 tsbp flat leaf parsley roughly chopped.<\/span><\/p>\n<p style=\"text-align: justify\" class=\"MsoNormal\"><span style=\"font-size: 11pt; font-family: Verdana\">&nbsp;<\/span><\/p>\n<p style=\"text-align: justify\" class=\"MsoNormal\"><span style=\"font-size: 11pt; font-family: Verdana\">preheat the oven<\/span><\/p>\n<p style=\"text-align: justify\" class=\"MsoNormal\"><span style=\"font-size: 11pt; font-family: Verdana\">place the cayenne<span>&nbsp; <\/span>black pepper paprika ginger garlic turmeric and cinnamon into a small bow land mix. Place the lamb in a large bowl and toss together with half of the spice mix. Cover and leave over night in the fridge.<\/span><\/p>\n<p style=\"text-align: justify\" class=\"MsoNormal\"><span style=\"font-size: 11pt; font-family: Verdana\">Heat 2 Tbsp olive oil in a large casserole dish. Add the grated onion and the remaining spice mix and cook over a gentle heat for about 10 minutes so that the onions are soft but not brown. Add the crushed garlic for the final 3 minutes.<\/span><\/p>\n<p style=\"text-align: justify\" class=\"MsoNormal\"><span style=\"font-size: 11pt; font-family: Verdana\">in a separate frying pan, heat the remaining oil and brown the cubes of lamb. Place the browned meat in the casserole dish. De glaze the frying pan with 140ml of tomato juice and add theses juices to the pan.<\/span><\/p>\n<p style=\"text-align: justify\" class=\"MsoNormal\"><span style=\"font-size: 11pt; font-family: Verdana\">Add the remaining tomato juice, chopped tomatoes, apricot dates, raisins or sultanas flaked almonds saffron stock and honey to the casserole dish.
