Oil fry the sliced onions, ginger, and garlic paste, all spices and the mutton together till the onions are transparent. Add water and cook till the mutton is tender. Then take out the mutton from stock. Reserve stock to cook rice in it.<\/span><\/p>\n<p style=\"text-align: justify\" class=\"MsoNormal\"><span style=\"font-size: 11pt; font-family: Verdana\">&nbsp;<\/span><\/p>\n<p style=\"text-align: justify\" class=\"MsoNormal\"><span style=\"font-size: 11pt; font-family: Verdana\">Wash and soak the rice in water for one hour. Fry the brinjals brown in remaining oil. Then in a deep non &ndash; stick pot, make the layers of brinjals, mutton and tomatoes. Then spread the soaked rice evenly on top of the layers. Add just enough mutton stock to cook the rice in it. Cook on slow fire till the rice is tender and dry. Then turn out in a round greased serving dish so that the vegetables and mutton layers are on top.<\/span><\/p>\n<p style=\"text-align: justify\" class=\"MsoNormal\">&nbsp;<\/p>\n<p style=\"text-align: justify\" class=\"MsoNormal\"><span style=\"font-size: 11pt; font-family: Verdana\">Serve with cucumber raita. <br \/> 1 cup yoghurt (sour milk)<\/span><\/p>\n<p style=\"text-align: justify\" class=\"MsoNormal\"><span style=\"font-size: 11pt; font-family: Verdana\">1 small cucumber<\/span><\/p>\n<p style=\"text-align: justify\" class=\"MsoNormal\"><span style=\"font-size: 11pt; font-family: Verdana\">1 small bunch coriander leaves<\/span><\/p>\n<p style=\"text-align: justify\" class=\"MsoNormal\"><span style=\"font-size: 11pt; font-family: Verdana\">2 green chillies<\/span><\/p>\n<p style=\"text-align: justify\" class=\"MsoNormal\"><span style=\"font-size: 11pt; font-family: Verdana\">1 tsp garlic paste<\/span><\/p>\n<p style=\"text-align: justify\" class=\"MsoNormal\"><span style=\"font-size: 11pt; font-family: Verdana\">Salt<\/span><\/p>\n<p style=\"text-align: justify\" class=\"MsoNormal\"><span style=\"font-size: 11pt; font-family: Verdana\">&nbsp;<\/span><\/p>\n<p style=\"text-align: justify\" class=\"MsoNormal\"><span style=\"font-size: 11pt; font-family: Verdana\">Mix cucumber with yoghurt along with the above ingredients and serve.<\/span><\/p>\n<p style=\"text-align: justify\" class=\"MsoNormal\"><span style=\"font-size: 11pt; font-family: Verdana\">&nbsp;<\/span><\/p>\n<p style=\"text-align: justify\" class=\"MsoNormal\"><span style=\"font-size: 11pt; font-family: Verdana\">&nbsp;<\/span><\/p>\n","protected":false},"excerpt":{"rendered":"<p>&nbsp; Ingredients &frac12; Kg mutton &frac12; Kg brinjals (cut into rounds) &frac12; Kg tomatoes (cut into rounds) 2 Cups rice 1 Onion sliced 1 tsp ginger paste 1 tsp garlic paste &frac12; tblsp whole garam masala (all spices) &frac12; cup oil Salt &nbsp; Method In three tblsp.
