{"id":8610,"date":"2007-09-03T02:15:16","date_gmt":"2007-09-03T00:15:16","guid":{"rendered":"http:\/\/dev.radioislam.org.za\/wordpress\/2007\/09\/03\/seafood-akhni-180607\/"},"modified":"2007-09-03T02:15:16","modified_gmt":"2007-09-03T00:15:16","slug":"seafood-akhni-180607","status":"publish","type":"post","link":"https:\/\/radioislam.org.za\/a\/seafood-akhni-180607\/","title":{"rendered":"Seafood Akhni (18.06.07)"},"content":{"rendered":"<div align=\"justify\"> <font size=\"-1\"><strong>Ingredients<\/strong><\/font><font face=\"Verdana, Arial, Helvetica, sans-serif\"> <\/p>\n<p><font size=\"-1\">1 kg mixed seafood (prawns calamari kingklip crayfish tails)<\/font><\/p>\n<p><\/font><br \/><font face=\"Verdana, Arial, Helvetica, sans-serif\"><\/p>\n<p><font size=\"-1\">   3 large onions finely sliced<\/font><\/p>\n<p><\/font><br \/><font face=\"Verdana, Arial, Helvetica, sans-serif\"><\/p>\n<p><font size=\"-1\">   Cooking oil for frying <\/font><\/p>\n<p><\/font><br \/><font face=\"Verdana, Arial, Helvetica, sans-serif\"><\/p>\n<p><font size=\"-1\">   200grm mushrooms chopped<\/font><\/p>\n<p><\/font><br \/><font face=\"Verdana, Arial, Helvetica, sans-serif\"><\/p>\n<p><font size=\"-1\">   1 Green pepper seeded and chopped<\/font><\/p>\n<p><\/font><br \/><font face=\"Verdana, Arial, Helvetica, sans-serif\"><\/p>\n<p><font size=\"-1\">   1 Red pepper seeded and chopped<\/font><\/p>\n<p><\/font><br \/><font face=\"Verdana, Arial, Helvetica, sans-serif\"><\/p>\n<p><font size=\"-1\">   750ml uncooked rice<\/font><\/p>\n<p><\/font><br \/><font face=\"Verdana, Arial, Helvetica, sans-serif\"><\/p>\n<p><font size=\"-1\">   Salt and Tabasco sauce to taste<\/font><\/p>\n<p><font size=\"-1\"><strong>Marinade<\/strong><\/font><\/p>\n<p><\/font><br \/><font face=\"Verdana, Arial, Helvetica, sans-serif\"><\/p>\n<p><font size=\"-1\">   60ml peri-peri sauce<\/font><\/p>\n<p><\/font><br \/><font face=\"Verdana, Arial, Helvetica, sans-serif\"><\/p>\n<p><font size=\"-1\">   10ml grouched garlic<\/font><\/p>\n<p><\/font><br \/><font face=\"Verdana, Arial, Helvetica, sans-serif\"><\/p>\n<p><font size=\"-1\">   Salt &amp; freshly ground pepper to taste<\/font><\/p>\n<p><\/font><br \/><font face=\"Verdana, Arial, Helvetica, sans-serif\"><\/p>\n<p><font size=\"-1\">   5ml Tabasco sauce<\/font><\/p>\n<p><font size=\"-1\"><strong>Method<\/strong><\/font><\/p>\n<p><font size=\"-1\">1. Combine marinade ingredients in a mixing bowl add mixed    seafood and marinate for 1 hour<\/font><\/p>\n<p><\/font><br \/><font face=\"Verdana, Arial, Helvetica, sans-serif\"><\/p>\n<p><font size=\"-1\">   2. Fry onion in heated oil until golden 5-10 mins.<\/font><\/p>\n<p><\/font><br \/><font face=\"Verdana, Arial, Helvetica, sans-serif\"><\/p>\n<p><font size=\"-1\">   3. Add mushrooms and fry a further 5 mins or until softened.<\/font><\/p>\n<p><\/font><br \/><font face=\"Verdana, Arial, Helvetica, sans-serif\"><\/p>\n<p><font size=\"-1\">   4. Remove onions and mushrooms from pan and set aside.<\/font><\/p>\n<p><\/font><br \/><font face=\"Verdana, Arial, Helvetica, sans-serif\"><\/p>\n<p><font size=\"-1\">   5. Fry peppers in oil for 5 mins remove from pan and set aside.<\/font><\/p>\n<p><\/font><br \/><font face=\"Verdana, Arial, Helvetica, sans-serif\"><\/p>\n<p><font size=\"-1\">   6. Transfer seafood and marinade to frying pan and fry for 15 mins.<\/font><\/p>\n<p><\/font><br \/><font face=\"Verdana, Arial, Helvetica, sans-serif\"><\/p>\n<p><font size=\"-1\">   7. Meanwhile boil rice in salted water until tender about 20 mins.<\/font><\/p>\n<p><\/font><br \/><font face=\"Verdana, Arial, Helvetica, sans-serif\"><\/p>\n<p><font size=\"-1\">   8. Drain and rinse the rice.<\/font><\/p>\n<p><\/font><br \/><font face=\"Verdana, Arial, Helvetica, sans-serif\"><\/p>\n<p><font size=\"-1\">   9. Layer ingredients in a large saucepan as follows:<\/font><\/p>\n<p><font size=\"-1\">First rice, then onions and mushrooms (save some onion for    garnish) then peppers and finally seafood mixture. Continue layering until all    the ingredients have been used up. Sprinkling each layer with a little salt    and Tabasco sauce.<\/font><\/p>\n<p><\/font><br \/><font face=\"Verdana, Arial, Helvetica, sans-serif\"><\/p>\n<p><font size=\"-1\">   Steam covered over medium heat for 30 mins. Garnish with reserved onions.
