They can bind ingredients as in meatloaves or croquettes. They can also leaven such baked high rises as soufflés and sponge cakes. Their thickening talent is seen in custards and sauces. Eggs emulsify mayonnaise, salad dressings and Hollandaise sauce and are frequently used as a glaze to coat breads and cookies. They clarify soups and coffee. In boiled candies and frostings, eggs retard crystallization. They also enable coating. In general, eggs add colour and flavour. As a finishing touch, they can be hard cooked and used as a garnish.

LEFT OVER EGG WHITES
Some recipes will ask for more egg yolks than whites. You hate to throw them out, but what do you do with them?

You can place the egg whites into a tightly sealed container and refrigerate for up to 4 days. You can use the whites for meringues or angel food cake. If you don't plan on making anything like that soon, put some water on to boil with a teaspoon of vinegar in a large pan. Drop in the egg whites one at a time and reduce the water to a simmer. Let the egg white cook until solid white and firm. Remove the whites from the water with a slotted spoon and let all of the water drain off. Now cut up the whites and place in a tightly sealed container and refrigerate. Use your egg whites as a nutritious topping for a salad, baked potato or soup.

A FRESH EGG
When you are preparing your ingredients for your recipe, you look in the fridge and you can't remember when you last bought eggs.
Are the ones that you have still fresh? Grab a large bowl and fill it up with water for this quick test.
Place a fresh egg into the water and see where it settles. If it settles on the side the egg is fresh.
If the egg stands at a bit of an angle the egg is anywhere from 3-9 days old. If the egg stands completely on end your egg is at least 10 days old

EGGS IN THE MICROWAVE?
OK, everyone has done this at least once!
You have put the egg into the microwave to boil it and the next thing that you know Egg mess everywhere!
Here is the deal. You can't microwave a whole egg, or even an egg with a whole yolk. If you would like to microwave the egg you will need to make sure to puncture the yolk first.
This will allow for expansion and should prevent the egg from exploding.

ANNOYING EGG SHELLS
You are making your favourite recipe using eggs and when you are cracking the eggs a piece of shell falls into your mixture.
You have been fishing around for it for a while now and you are getting frustrated. Should you just finish making it and hope that no one notices?
The simplest solution is to grab the piece of egg shell that you still have. Scoop out the piece of shell that you dropped in your mixture using that piece of shell.
The piece that dropped in will be attracted to the shell that you are scooping with kind of like a magnet.

BEAUTY TIPS ON EGGS.

Hair Egg Conditioner Recipe
1 teaspoon baby oil
1 egg yolk
1 cup water
Beat the egg yolk until it’s frothy, adds the oil then beat again. Add to the water. Massage into the scalp and throughout your hair. Rinse well.

Shampoo Recipe
In a blender, combine 1 ounce olive oil, 1 egg, 1 tablespoon lemon juice, and 1/2 teaspoon apple cider vinegar. Use as regular shampoo.

Facial Mask Recipe
Squeeze half a lemon and mix the juice with one beaten egg white. Leave on your face overnight or, for a quick pick-me-up, just 15 minutes.
