{"id":8980,"date":"2013-08-01T15:20:48","date_gmt":"2013-08-01T13:20:48","guid":{"rendered":"http:\/\/dev.radioislam.org.za\/wordpress\/2013\/08\/01\/chicken-biryani-recipe-010813\/"},"modified":"2013-08-01T15:20:48","modified_gmt":"2013-08-01T13:20:48","slug":"chicken-biryani-recipe-010813","status":"publish","type":"post","link":"https:\/\/radioislam.org.za\/a\/chicken-biryani-recipe-010813\/","title":{"rendered":"Chicken biryani recipe (01.08.13)"},"content":{"rendered":"<p>&ndash; COURTESY OF MIRIAM VALLY &ndash; AUTHOR OF THE PRIDE OF INDIAN COOKING<br \/>2 large onions &ndash;fried crispy and crushed<br \/>2 large tomato &#8211; liquidized<br \/>&frac12; carton sour milk &ndash; 1 &frac12; cups<br \/>&frac12; cup oil or ghee<br \/>2 cups rice &ndash; boiled half done with 1 dessertspoon rough salt and spices i.e., cinnamon, elachi cloves etc&hellip;<br \/>&frac12; cup masoor preboiled<br \/>1 &frac12; cups frozen peas<br \/>3 eggs boiled optional<br \/>3 medium potatoes &ndash; sliced in 6 and fried<br \/>USE THE FOLLOWING INGREDIENTS TO MAKE MASALA MIXTURE<br \/>Spices &ndash; a few elachi, cinnamon, cloves peppercorns<br \/>1 &frac12; heaped dessertspoons red ginger garlic masala<br \/>1 or 2 dessertspoons red course dry chilies for a stronger flavor<br \/>2 level dessertspoons fine dhania powder<br \/>2 level dessertspoons whole jeero<br \/>2 level dessertspoons rough salt or as required<br \/>1 tsp arad<br \/>1 tsp egg yellow &ndash; mix a little water<br \/>3 dessertspoons saffron water &ndash; a few strands saffron boiled<br \/>4 whole green chillies<br \/>&frac12; bunch green dhania chopped<br \/>2 level dessertspoons butter. Ghee or oil<br \/>Juice of 1 lemon<br \/>1 chicken disjointed<\/p>\n<p>Method:<br \/>Add all the ingredients to a dish and mix well.<br \/>Add masala paste\/mixture to chicken and rub well. It can be marinated overnight or for a few hours before cooking biryani<br \/>Add crushed onions, tomatoe and sour milk. Add &frac12; cup oil or melted ghee to the pot.Sprinkle 1 cup rice over oil and a handful of masoor and peas over rice.Add chicken pieces with mixture spread evenly.Add masoor and peas over the chicken. Lay eggs out and potatoes.<br \/>Cover with remaining rice.
