{"id":9092,"date":"2010-05-25T14:56:20","date_gmt":"2010-05-25T12:56:20","guid":{"rendered":"http:\/\/dev.radioislam.org.za\/wordpress\/2010\/05\/25\/tasty-vegetables-dish-25052010\/"},"modified":"2010-05-25T14:56:20","modified_gmt":"2010-05-25T12:56:20","slug":"tasty-vegetables-dish-25052010","status":"publish","type":"post","link":"https:\/\/radioislam.org.za\/a\/tasty-vegetables-dish-25052010\/","title":{"rendered":"Tasty Vegetables Dish (25.05.2010)"},"content":{"rendered":"<p>&nbsp;<\/p>\n<p style=\"text-align: justify\" class=\"MsoNormal\">&nbsp;<\/p>\n<p style=\"text-align: justify\" class=\"MsoNormal\"><span style=\"font-size: 11pt; font-family: Verdana\">2 sweet potatoes with peel, thickly sliced<\/span><\/p>\n<p style=\"text-align: justify\" class=\"MsoNormal\"><span style=\"font-size: 11pt; font-family: Verdana\">1 small butternut, cut into big cubes <\/span><\/p>\n<p style=\"text-align: justify\" class=\"MsoNormal\"><span style=\"font-size: 11pt; font-family: Verdana\">1 large red pepper, cut into big cubes<\/span><\/p>\n<p style=\"text-align: justify\" class=\"MsoNormal\"><span style=\"font-size: 11pt; font-family: Verdana\">2 cobs sweet corn, cut into 2cm slices<\/span><\/p>\n<p style=\"text-align: justify\" class=\"MsoNormal\"><span style=\"font-size: 11pt; font-family: Verdana\">2 gem squash cut in half<\/span><\/p>\n<p style=\"text-align: justify\" class=\"MsoNormal\"><span style=\"font-size: 11pt; font-family: Verdana\">&nbsp;<\/span><\/p>\n<p style=\"text-align: justify\" class=\"MsoNormal\"><span style=\"font-size: 11pt; font-family: Verdana\">Marinade:<\/span><\/p>\n<p style=\"text-align: justify\" class=\"MsoNormal\"><span style=\"font-size: 11pt; font-family: Verdana\">&frac14; cup olive oil<\/span><\/p>\n<p style=\"text-align: justify\" class=\"MsoNormal\"><span style=\"font-size: 11pt; font-family: Verdana\">2 Tbsp chilli sauce<\/span><\/p>\n<p style=\"text-align: justify\" class=\"MsoNormal\"><span style=\"font-size: 11pt; font-family: Verdana\">1 tsp crushed garlic<\/span><\/p>\n<p style=\"text-align: justify\" class=\"MsoNormal\"><span style=\"font-size: 11pt; font-family: Verdana\">1 tsp freshly ground black pepper<\/span><\/p>\n<p style=\"text-align: justify\" class=\"MsoNormal\"><span style=\"font-size: 11pt; font-family: Verdana\">1 tsp crushed cumin<\/span><\/p>\n<p style=\"text-align: justify\" class=\"MsoNormal\"><span style=\"font-size: 11pt; font-family: Verdana\">1 tsp salt<\/span><\/p>\n<p style=\"text-align: justify\" class=\"MsoNormal\"><span style=\"font-size: 11pt; font-family: Verdana\">1 tsp Robinsons veggie spice<\/span><\/p>\n<p style=\"text-align: justify\" class=\"MsoNormal\">&nbsp;<\/p>\n<p style=\"text-align: justify\" class=\"MsoNormal\" align=\"justify\">Sauce:<\/p>\n<p style=\"text-align: justify\" class=\"MsoNormal\" align=\"justify\">250ml fat free fresh cream<\/p>\n<p style=\"text-align: justify\" class=\"MsoNormal\" align=\"justify\">2 Tbsp mustard sauce<\/p>\n<p style=\"text-align: justify\" class=\"MsoNormal\" align=\"justify\">1\/2 cup cream style sweet corn<\/p>\n<p style=\"text-align: justify\" class=\"MsoNormal\" align=\"justify\">1\/2 cup coriander leaves &nbsp;<\/p>\n<p style=\"text-align: justify\" class=\"MsoNormal\"><span style=\"font-size: 11pt; font-family: Verdana\">&nbsp;<\/span><\/p>\n<p style=\"text-align: justify\" class=\"MsoNormal\"><span style=\"font-size: 11pt; font-family: Verdana\">Combine marinade ingredients and toss all the vegetables in the marinade except the sweetcorn. Coat the vegetables and place on a baking tray. Pre heat oven to 200 degrees. Bake vegetables until tender. Boil mealie cobs in salted water and drain. Mix vegetables and sweet corn together and spoon in to a glass baking dish. Combine sauce ingredients, pour over the vegetables and sprinkle coriander leaves over. Cover with foil.
