Seekh Kebabs
½ kg chicken fillet(wash and drain)
1 onion
2 slices bread
Salt to taste
½ tsp black pepper
1tsp jeeru (cumin)
1 tblsp crush garlic
2 tblsp ground almonds
2 tablespoon nestle cream
Ground green chillies to taste
Green dhania (coriander)
Sauce
2 tblsp butter
Juice of ½ lemon
2tblsp mayonnaise
Method:
Magimix everything together. Form long seekh. Put in a pot with little water and olive oil and steam .
Sauce method
Boil everything pour sauce over kebabs. Put under hot grill to brown. Serve with roasted sesame potato. Roasted sesame potato
Cut 4 potato into wedge par boil –potatoes that have been boiled. In your pyrex add 2tblsp olive oil to it add salt and fine red chillies
to taste cut some fresh mint toss potato sprinkle sesame seed. Bake in oven
Chicken Roulade
½ kg chicken mince
1 tsp chicken spice
1 onion (chopped)
¼ tsp black pepper
1 tsp garlic flakes
1 tsp dhana jeeru
1 tblsp green masala
In a pot mash 2 potatoes, mix with green chutney.
Mix everything together besides mash, take a piece of foil and on the dull side, pat mince, put mash on 1 end and roll it to close it. Seal nicely with foil and steam till done. Make sauce and pour over once steamed.
Sauce:
Juice of 1 lemon
1 tblsp tomato sauce
1 tblsp worchester sauce
1 tblsp chilli sauce
½ tsp aromat
½ tsp red chillies
2 tblsp butter
Boil on low till butter melts. Serve with roulade and grated crisp.
Processes chicken fritters
Magimix 1 cup chicken fillet, 3 slices bread, 2 eggs, ½ cup milk, 1 tblsp green masala,1 tsp salt, 1 tblsp dry dhana, process together. Warm tawa and make fritters. In another pot add butter and lemon juice, toss fritters in there and serve.
Macaroni mozarella kebabs
1 ½ cups chicken mince
1 cup mix vegetables
1 cup macaroni (boiled)
Process mix veg, macaroni, 2 red chillies, greens, garlic, juice of ½ lemon . Once processed mix with mince and add 3 tbl olive oil, 1 tsp salt, 1 tsp lemon pepper, 1 tsp garlic lemon and parsley seasoning. mix everything nicely together. Cube mozarella cheese and Form mince around it, dip in egg and breadcrumbs. (breadcrumbs, fine vermicelli, tal and dry parsley) fry till golden and serve.
Chicken kebab
NO 1
•1 kg chicken fillet – cubed in magimix
•remove from magimix and add the following:
• 2 tsp crushed jeero
• 2 tsp salt – you can abit more depending on taste
• 2 tsp baking powder
• 2 tsp crushed garlic
NO 2
•2 onions
•1 bunch green dhania
• green chillies to taste
• 2 slices of bread.
• chop in magimix
• thereafter mix no 1 and no 2 together in magimix and form into balls.
• fry in deep oil and serve with puri.
• kabaab balls can be rolled and frozen.
