Ingredients
½ kg chicken fillets cut into strips
400g fresh bhinda
3 tbslp oil
1 tsp red chilli powder
1 tsp turmeric/arad powder
2 tblsp white vinegar
1 tsp ginger garlic masala
2 tsp green chilli paste
2 tsp ground coriander/dhania
1 tsp crushed cumin/jeera
1 tsp garam masala
½ cup hot water
1 small soft tomatoe. grated
1 tblsp tomato puree
1 ½ tsp salt
1 tblsp lemon juice
spice for bhinda
1 tsp red chilli powder
2 tsp turmeric
2 tsp ground coriander
½ tsp crused green chilli
1 tsp crushed cumin
1 tsp salt
garnish
2 tsp chopped green dhania
Method
• Heat oil on low. add chiili powder, turmeric, vinegar, ginger garlic, green chilli paste, coriander, cumin and garam masala
• Add water and braise spices well until soft
• Add tomatoe and puree, cook until tomatoes have been reduced
• Add chicken strips, salt and lemon juice.stir fry uncovered for approximately 10 minutes until cooked
• Remove from heat set aside
• Wipe bhinda clean with paper towel and cut into strips.add chilli powder turmeric, coriander, chilli, cumin and salt
• Heat oil in a kadai/wok and stir fry bhinda until tender but firm and well coated with spices
• Add bhinda to chicken and mix well
• Remove from heat and garnish with green coriander
Tip: do not overcook bhinda as it becomes glutinous.
