675ml flour
5ml salt
100ml brown sugar
12.5ml bi-carbonate soda
180ml butter
500ml buttermilk
2 eggs
125ml oil
Method
Mix the dry ingredients. Rub in the butter. Beat the buttermilk, eggs, and oil together. Mix the dry ingredients. Chill the mixture for about 8 hours. Scoop into muffin pans and bake at 180C for 5 – 10 minutes.
