Ingredients
350G Pasta bows or spirals
2 chicken fillets cut into strips
5ml salt
15ml olive oil
30ml crushed garlic
1 red pepper sliced
1 green pepper sliced
3 baby marrows cut julienne
3 carrots cut julienne
1 punnet mushrooms sliced
100g sundried tomato, cut into strips
60ml soya sauce
30ml Portuguese spice
30ml paprika powder
30ml resh coriander, chopped
salt & coarse pepper to taste
Method
1. Cook the pasta as per instructions.
2. Heat the oil in a wok and stir-fry all the vegetables for 5 min.
3. Add the chicken and stir-fry for 7 mins.
4. Add all remaining ingredients.
5. Mix pasta with the vegetables and place in shallow oven proof dish.
