make a paste to marinate the chicken with the following spices
this is enough for 1 to 1 ½ kg of chicken thighs or chicken breast fillet or if you prefer boneless
paste ingredients
½ cup double cream yoghurt
¼ tsp turmeric/arad
1 tsp cayenne pepper
1 tsp salt
1 tsp chilli powder
blend the following whole spices and ingredients in a grinder
100g raw cashews
50g almonds
2 tblsp dried coconut
1 big stick cinnamon
3 cloves
1 tsp peppercorns
3 whole cardomoms/elachi
2 bay leaves
2 garlic cloves
1 piece ginger. ½ thumb size
1 tsp whole coriander
Add this paste to the chicken and marinate for a few hours or overnight. Braise 1 big onion until brown and crispy in a pot with oil or ghee. Blend that in a food processor with ¼ bunch dhania and ½ cup dried onions. Add chicken to the pot and add the onion mixture and ½ cup double yoghurt to the pot. you can substitute the yoghurt with fresh cream. Add extra cashew nuts for extra flavour {optional},add ½ cup water, 1 tsp salt. Mix all the ingredients together and cook on a low heat until done. Do not add lots of water to this dish because the texture is supposed to be creamy. Cook until done. garnish with extra fried. Onions, cashews and chopped coriander. Serve with roties or naan.
