Chicken roll ups (27.09.07)
1 kg chicken fillet
5ml salt
½ tsp crushed jeera
1 tsp crushed garlic
1 Tbsp lemon juice
3 eggs
¼ cup milk
1 tsp chillie powder
Bread crumbs and flour for rolloing
Oil for deep frying
Butter filling
180g garlic butter
3 Tbsp chopped herbs of your choice
½ tsp grated lemon rind
½ tsp crushed chillies
Method:
Mix herbs together with lemon rind and garlic butter.
Divide butter into sticks the length and thickness of a finger.
Refrigerate butter sticks till very firm.
Slice through middle of each chicken breast to give 2 pieces, wash and part dry, then pound with a mallet until it is spread out thin.
Marinate chicken pieces in spices, lemon juice and salt for ½ hr.
Place into each chicken piece a stick of butter, then fold & roll up until butter is completely closed.
Beat eggs with milk, roll chicken rolls in flour seasoned with salt and chillies then dip into egg & milk mixture finally roll in bread crumbs,
Dip chicken rolls into egg & milk mixture finally roll in breads crumbs,
this will ensure that the chicken is well enclosed with the bread crumbs
Freeze until required.
Heat oil in a deep pan and gently lower in breast, fry for 5 minutes cook chicken.
If you however you want the chicken cooked longer place in a pan or oven proof glass dish and place in pre heated oven for +- 20- 30 minutes.
