Ingredients
1 kg chicken fillets, well drained and cut into flat pieces or as desired
Spice paste
• 2 tsp red chilli powder
• 2 tsp coriander powder
• 2 tblsp lemon juice
• 2 tblsp vinegar
• 2 tsp tikka spice..
• 1 tsp coarse black pepper
• 1 tsp gharam masala
• 2 heaped tsp ginger garlic masala
• 1 ½ tsp salt
Combine the above ingredients into a paste
• 3 tblsp oil for braising chicken fillets
• ½ cup hot water
• 2 tblsp oil for braising spices
• 2 small tomatoes, grated
• 2 tblsp tomato puree
• 2 tsp green chillie paste
Garnish
1 tbslp chopped green dhania
Sesame seeds
Method
1. Combine the spice paste ingredients. Use half of the spice paste to marinate the chicken. Set aside the other half for later use.
2. Heat oil for chicken in a flat broad pot. Place the chicken fillets in one layer close to one another and braise on medium heat, with the pot unclosed. fillets should be tender and well coated with spices
3. Remove fillets from pot and set aside.
4. In the same pot, heat oil for spices. add the remaining spice paste and hot water, braise well
5. Add tomatoes, puree, and green chilli paste and continue to braise. Add a little more water if needed.
6. Add chicken to the masala and stir well
7. Remove from heat and garnish
