1 kg chicken drum stick (cleaned washed and drained)
1 Tbsp Portuguese chicken spice
2 tsp garlic paste
1 Tbsp lemon juice salt to taste
¼ cup butter, melted
Sauce:
1 tub ricotta cheese, smooth
3 Tbsp butter, melted
¾ cup chilli garlic sauce
1 tsp garlic paste
10 peppadews
1 lemon, rind grated and juice extracted
Salt to taste
Parsley, chopped
Sauce:
In a bowl, combine all ingredients and mix well; place in refrigerate to chill. Preheat oven to 200°C. Spray an oven dish with non- stick cooking spray. In a large bowl, add all spices and juice; mix well to combine. Melt butter in oven dish and add chicken. Bake for 25 – 30 minutes until chicken is almost cooked. Remove dish from oven and pour sauce over; bake for a further 15 minutes till bubbly and fragrant. Serve with salald and crusty bread.
