Recommended : Use canned chickpeas for this dish,as they have just the right texture.
Ingredients :
1 400g can of Chickpeas
1 teaspoon cumin seeds
1 teaspoon coriander seeds
1/2 red sweet pepper ,deseeded and diced
1/2 orange sweet pepper ,deseeded and diced
1/4 small red cabbage ,shredded
1 Iceberg lettuce , shredded
1 Large carrot ,diced
1/2 cucumber sliced
1/2 red onion sliced
1 Teaspoon fresh coriander (optional)
1 Teaspoon fresh mint (optional)
For the dressing :
2 garlic cloves,crushed
salt
1 tablespoon olive oil
2 tablespoons lemon juice
large pinch of sugar
1 Teaspoon crushed dried red chillies
Method :
1) Drain the chickpeas.Dry roast the cumin and caoriander seed in a non stick pan,then crush them lightly with a pestle and mortar.
2) Make the dressing in a small bowl ,mix all the ingredients and set aside.
3) Mix all the remaining salad ingredients in a salad bowl.POur the dressing over and toss everything together to coat the salad uniformly.
4) Finally sprinkle the cumin and coriander seeds over the top before serving.
