125g butter or margarine. Room temperature
1 cup castor sugar
2 eggs
1 and a half cups sifted cake flour
1 tsp Cream of Tar Tar
Half tsp Bicarbonate soda
Half cup milk
Cream butter and sugar well. Add in eggs.. beat the 2 in a bowl then add. Beat for a while with eggs. Sift dry ingredients into a bowl. Alternate with milk and add to creamed mixture. Beat well. A good mix with the spatula
Preheat oven to 180 deg. Grease pans well. I used mini cupcake pans. Spoon batter into the pans..3 quarter way full. Put to bake ..at least 20 min..till golden color. Cool for a while.
Prepare Syrup
1 cup boiling water
60g butter
1+ half-cup Icing sugar
1 + half tsp vanilla essence
2 Tbsp. cocoa
Whisk well and bring to a boil. Set aside to cool. Dip a few cakes .using a spoon or your hands. u need to work quickly Then. Leave in a bowl. Roll in coconut
