250gr butter (divide into 4 portions)
Pinch of salt
½ tsp b.powder
2 tblsp lemon juice
1 egg yolk
½ to ¾ cup ice water
For sprinkling mix togeher ¾ cup maizena and 1 tsp cream of tartar.
Sift dry ingredients together, rub in 1 portion of butter. Beat the yolk, water and lemon juice and form dough. Add more water if needed. Make a nice soft dough, leave to rest in the fridge for 1/2 an hour. Roll out dough and grate 1 portion of butter over, prinkle maizena mixture over, repeat 3 times allowing dough to chill in the fridge , lastly roll the dough and fold in without butter or maizena.
