500g carrots (peeled and washed)
1/2 cup ghee/ Clarified butter
2 tblsp sojee/taystee wheat
1/2 litre milk
1/2 tin condensed milk
1/2 tsp cardamom powder/elachi powder
1/2 cup klim powder
1/2 cup fresh cream
1/2 cup klim powder
Few strands of saffron
In a heavy pot braise ghee and sojee till slightly pink add the carrots and cook for 5-10 min then add the milk, condensed milk, Klim powder, and cardamom mix until it thickens. Keep mixing the halwa to prevent it from scorching lastly add the fresh cream, saffron. Keep mixing the halwa till color changes and starts leaving the sides of the pot garnish with almonds and pistachios.
