1kg puff pastry
Filling:
1 bunch spinach
250- 230g cubed/ chopped chicken
1 onion
1 tsp sweet Basil
1 tsp garlic paste
1 tsp salt
1 Tbsp butter
1 Tbsp oil
White:
2 eggs
2 cups milk
2 Tbsp butter
3 Tbsp flour
Pepper to taste
1 piece feta cheese
Mozzarella cheese and cheddar cheese grated.
Method:
Chop spinach and set aside
Slice onion and fry in butter and oil
Add garlic, salt and basil
Add chicken and cook until soft
Add spinach and cook quickly
Once cooked, strain mixture in colander until water is drained.
Make sauce like a white sauce and add beaten eggs before heating mixture till it thickens.
Add spinach and chicken mixture to white sauce.
Roll out the pastry and place muffins pans.
Put one tsp of filling in pastry base.
Grate cheeses over it and bake at 200C for +- 10 minutes.
Lower heat to 180C and bake a further 5 minutes or until done.
