Pinch of salt
1 lb butter (use 1/4 lb for dough and leave remaining butter to grate over dough)
Sift flour and salt, make breadcrumbs with butter
Mix together:
1 tblsp vinegar
1 egg yolk
1 cup cold water
In another bowl mix:
1 cup maizena
1 tsp cream of tartar
Make dough with liquid mixture, once dough is formed make 8 or 9 balls, roll each one to the size of a side plate and grate butter over all except 1, sprinkle maizena mixture over butter, stack all the rotis with the butter on top of one another. Roll into a big circle, repeat for the second time, fold and leave to rest overnight in the fridge.
