Unroll 2-3 sheets. Cut into even squares (8 squares) place 1 square on top of the other as shown below and repeat this sequence for 4 squares by brushing melted butter between each layer.
Place pastry into an oiled cupcake pan and dry bake until crispy. Dry bake is a baking method where raw dry beans are placed in the center of the pastry while baking to prevent the pastry from rising.
Remove from the pan once baked and fill with desired filling.
Filling:
1 cup cubed chiken fillet
1 tsp salt
Green masala to taste
½ tsp lemon pepper
1 Tbsp lemon juice
1 tsp crushed garlic.
Preperation:
Marinade the above ingredients with the chicken for 2 – 3 hours before cooking.
Cool mixture with olive oil until mixture is dry.
Once cooked add:
2 Tbsp mayonnaise
½ tsp garlic
1 Tbsp peri peri
Fill the phylo pastry basket with the filling and garnish with tomatoes roket and boiled egg.
