Prepare the potato filling :
Peel and cut up 2 potatoes
Boil the potatoes with little turmeric and salt
Drain well
To the pot add 3 tblsp oil..handful chopped curry leaves.1 tsp ground chilli..
Half tsp mustard seeds
1 tsp crushed jeera..cumin seeds
2 tblsp crushed garlic
Braise and add in the potatoes
1 tsp lemon juice
Adjust salt
Add green chopped dhania
Cool well
You will need 1 beaten egg
Grated cheese
Take your bread slices
Trim off the sides
Roll the bread slices flat
Brush egg properly on the rolled out slice
U can add some sauce at this stage..green or red chutney will be perfect
Add the potato filling ..smear properly
Sprinkle cheese over..not too much
Gently roll each slice of bread into a swiss roll
Secure the edges well
Cut into half
And chill for a while
Separately beat an egg well
Season lightly with pepper and salt
Or add green chutney masala to the egg
Dip the bread and fry in shallow oil ..medium heat
Turning gently to get a lovely golden colour
Remove onto a paper towel and serve.
