Ingredients
375ml self raising flour sifted
15ml white sugar
20ml grated lime rind
60ml olive oil
250ml plain yoghurt
2extra large eggs
milk if necessary
Method
1. Place the flour, sugar and lime rind into a mixing bowl.
2. Combine the oil yohurt and eggs and mix well
3. Add this to the dry ingredients and mix to combine. The mixture should be of a stiff dropping consistency add a little milk if necessary.
4. Spoon into greased muffin tins and bake at 180c for 20 minutes for a standard muffin and 15 mins for a mini muffin.
5. Remove and cool
