2 Tbsp butter
2 Tbsp cake flour
1 cup milk
400g cooked spinach
Drained and chopped
Salt and freshly ground black pepper
Pinch of grated nutmeg
4 eggs beaten
Philadelphia cream cheese
For serving
Preheat the oven to 160 degrees
Melt the butter and add the flour. Cook for 1 minute, then add the milk. Stir well until it begins to thicken.
Add the spinach (make sure all the water is squeezed out), salt, pepper and nutmeg, cook over medium heat for about 15 minutes.
Remove from the heat and add the eggs. Mix well.
Grease an ovenproof dish, pour in the mixture and bake for about 30 minutes.
When cooked, remove from the oven and set aside to cool. Cut into slices and top each slice with a dollop of cream cheese. Serve as an accompaniment to fish or meat dishes.
