Steak fillings (22.07.08)

 

 

Rolls

8 cups flour

2 tsp salt

1 pkt instant yeast

4 Tbsp sugar

1 Tbsp vinegar

¾ cup oil

1 ½ cups milk (warm)

½ cup water (warm)

 

Extras

 

1 eggs

Tal

Little oil

 

 

Method:

 

Mix the flour, salt, yeast and sugar in a dish, make a well in the centre and add the vinegar and oil. Make the dough with warm water and milk. Knead well, let rise for 1 ½  hours and punch down. Roll out little rotis and fill with steak filling. Fold into a long roll. Place on a tray and brush with egg and Tal. Let rise and bakeat 180 for +- 20 minutes. While warm brush with oil. Cover

 

Filling

 

2 Tbsp butter

1 kg topside steak (cubed)

2 tsp garlic

2 tsp ground green chillies

2 tsp salt

1 tsp whole jeeroo

½ tsp arad

2 Tbsp lemon juice

2 potatoes (cubed and fried)

1 small bottle little pickled onions (cut in half)

1 bunch green dhania

 

Method:

 

Heat the butter, add the steaks and cook for a while, add the garlic, green chillies, salt, jeeroo, arad, and the lemon juice. Cook till done add the potatoes and pickle onions. Add green dhania. Mix well.
