Make a Marmalade
500g lemons
1lt water
500g sugar
Chop up the fruit fairly finely. Save the pips and tie them in a muslin bag, or use a piece of a clean. Swipe cloth. Place the fruit in a pan, cover with water, and muslin bag and bring fro 20 min. Add sugar and stir to dissolve and boil again for 30min
Bottle insterillised.
Pickle The Problem:
1kg ripe lemons
120g coarse salt
125ml sugar
5ml cumin seeds
A generous grinding of black pepper
15ml mild curry powder
6cm piece of fresh root ginger, peeled and grated.
2 red chillies
Fresh lemon juice
Wash the fruit and slice into wedges mix salt sugar and spices together.
Into the base of a large preserving jar
Layer lemon wedges in the jar
Sprinkling each layer with spice mixture
Put the chillies on top and pour enough fresh lemon juice to cover completely. Seal and turn upside down. Store in a cool place.
