Ingredients
1 cup espresso
1 tsp vanilla extract
1 tbsp granulated sugar
14-16 ladyfingers
3 egg yolks
1/2 cup sugar
250 g mascarpone (at room temp)
1 cup heavy whipping cream
1 tsp vanilla extract
2 tbsp cacao powder
Instructions;
In a bowl, combine the coffee, vanilla, and sugar. In a medium heat-resistant bowl, whisk yolks and sugar. Place the bowl on top of a small pan with simmering water and stir 7-8 min on low heat until the sugar has dissolved. Remove from the heat and let it cool at room temp. In a medium bowl, add mascarpone and vanilla and beat together. Pour egg mixture and whisk until well combined. In another medium bowl, beat cold heavy cream until stiff peaks form. Using a wooden spoon fold the whipped cream into the mascarpone mixture. Dip each side of the ladyfingers in the coffee mixture. Then place them into the bottom of a cup or jar to create a layer (if necessary, break the ladyfingers in half). Pipe a layer of ready cream. Then place another layer of coffee-dipped ladyfingers over the cream. Cover with plastic wrap and chill overnight. Dust with cocoa powder before serving.
