Tripe n Tongue recipe (10.10.13)

Tripe & tongue is not something we eat often and we tend to look forward to obtaining it during the time of Eid ul Adha

When we all sacrifice our chosen animals as prescribed by the Almighty to commemorate the sacrifice of Prophet Ibraahim  of  his son Ismaeel  who so willingly & unhesitatingly carried out the command of Almighty whereby
Ismaeel was replaced by a ram from Heaven. A test from Almighty passed with flying colours by father & son!

Tripe:
 
Scrape off all the black on the tripe with a knife as much as possible then rinse & Put in boiling water, remove & scrape off again, repeating  procedure a few Times until its white. Rinse off again then boil in salted water with a little turmeric & saffron. Cut into small cubes, cook an onion & tomato chutney then add ojri to it.  Cook for approximately                                                       
5-10 minutes. Garnish with chopped dhania & garam masala

Tongue:
 
1 cows tongue
 
Pepper, garlic, green chillies, lemon juice-marinate after boiled & cleaned
 
 
1. Boil the tongue in water with salt for 50-60 minutes.
2. Scrape off the white that appears on the tongue and slice thinly.
3. Marinate with spices then steam with butter.
