This makes 1-2 servings… you can double the recipe as you need.
Traditionally served with a flatbread, but can easily be transformed into a low carb dish using no bread or low carb flatbreads.
Step 1 – Yoghurt
1/2 cup Double cream yoghurt or Labneh
1/2 tsp of fresh crushed garlic
1/2 tsp of fresh or dried parsley
A squeeze of fresh lemon
Salt and white pepper to taste
Mix together the above ingredients and spread out at the bottom of your serving dish. Or if using a flatbread, spread the yoghurt over the flatbread.
Step 2 – Fried Eggs
1-2 extra large eggs
1 -2 T ghee/coconut oil/ butter/ olive oil
Salt and pepper
Fry your eggs (1-2 per person) in your choice of ghee /coconut oil/ butter/olive oil until your desired liking.. most preferred are to cook until the edges are browned with a soft yolk. Place the eggs on top of the yoghurt, season with salt and pepper.
Step 3 – Paprika butter sauce
1 Tblsp ghee
A pinch of red chillie flakes (optional)
1/2 tsp of paprika
1 full tsp pistachio dukkah
Heat 1 butter/ghee Add in the paprika, a pinch of red chilli flakes and dukkah. Also to sizzle a for a little and drizzle over your eggs. Top with some fresh dukkah, lemon zest, dried chili flakes and spinach.
Note- if you’re serving on a naan or a sourdough bread, lightly toast the bread and once cooled, spread the yoghurt on top. You can make one large naan or use mini naans and make individual ones.
