Vegetarian Lagan (29.05.07)

1 Medium Onion – chopped

½ green pepper – chopped


½ cup grated cheese


3 Tbsp melted butter


2 baby marrows- grated


1 big carrot- grated


1 ½ tsp ground green chillies


4 eggs


1 cup frozen corn


75g self raising flour

Method:

1. Beat eggs then add in the flour, chillies and salt – mix well.


2. Combine rest of ingredients with egg mixture and mix well.


3. Pour mixture into a greased casserole dish and bake at 180°C for 35 to 40 minutes.
