Cheesy Aloo Paratha
Ingredients
Today’s puff pastry,
Smear with ghee n roll up like a Swiss roll, cut into 8 pieces
Boiled potatoes… Boiled and mashed.
Directions
To the mash, add little ghee, salt, ground green chillie, garlic, Dhana jeeru, lemon juice…
Roll out pastry… Spread potato and grated cheese over each round and cover with another round.
Fry on a tawa, drizzling ghee over each side…
Bombay sandwich
Butter a slice of bread
Spread with green chutney
A slice of cheese
Top with masala aaloo fry
Red onion rings, green pepper rings, sliced tomatoes or 1/2d cherry tomatoes
(Optional: cucumber &, sliced jalapenos )
Put dollops of red chutney & mayo
Top with a slice of bread, butter & toast on a griddle pan
Potato Filling for Samoosas
5 large potatoes or 8-9 small/medium, cubed
Boil in salt water till done
When done mash & add the following ingredients:
2 tsp lemon juice
Salt & pepper
Then make a wagaar with:
1 tbsp ghee
1&1/4 tsp mustard seed
1 & 1/4 tsp jeeroo
curry leaves
2 tsp garlic
2 tsp green chillies
Braise & add to potatoes. When cool add in 3/4 cup cubed cheddar cheese & 1/2 cup sour cream
Kiri Balls
1 kg chicken mince
1 big onion grated
4 potatoes boiled and mashed
1 tsp salt
1 tsp ground pepper
2 tblsp green masala
2 eggs
1 tblsp dhania jeeru
Freshly ground parsley and dhania
Mix all of the above well
2 boxes kiri cheese
2 punnets mushrooms finely cubed
Steam mushrooms with salt and pepper and 1 tabelspoon olive oil. When cool mix kiri cheese into it. Make small balls and freeze.
When frozen wrap chicken mince mixture around. Hands should be oiled for easy working.
Then dip in beaten eggs and crumbs.
MIAS FARM POTATOE PIE RECIPE
• 2 cups cake flour
• 2 tsps baking powder
• 2 tblsp oil
• 1 egg
• ¼ tsp salt
• enough milk to make a soft dough
• mix all the ingredients together to make a soft dough
Filling
• 3 large potatoes
• ¼ cup water
• 3 tblsp oil
• salt to taste
• ¼ tsp arad
• ground red chiilies to taste
• 1 cup samoosa purr/optional
• chopped green dhana and spring onions
Method
Dice potatoes and steam with water, oil, salt,arad and ground red chillies until water burns out and potatoes are cooked. Remove from heat and cool. Make pies and dip in a paste made from flour, water and 1 egg. Deep fry in moderately hot oil until golden brown on both sides
