A selection of chicken recipes with a difference (03.08.17)

RED PEPPER CHICKEN

1 chicken cut cleaned and washed..
Marinade with the following ingredients:
½ tblsp Red masala, 1 Tsp salt-or to taste, 2 tblsp Lemon Juice ,2 tblsp Vinegar, 1-2 Fresh garlic pods sliced
1 tsp Chicken spice ,1 tsp Lemon pepper ,½ tsp Crushed jeera, 2 tsp Crushed red chillies ,Cook in Ghee – for 45min on a low heat
Separately blend: 2 Red peppers 1 tub Sour cream or crème fraiche 2 tblspn tomato Paste Few strands Saffron Add to the chicken and allow to simmer for 5mins. Garnish with coriander and sun dried tomatoes

ADEGA CHICKEN
1 chicken cut and washed
1 tsp salt
2 tblsp lemon juice
1 tblsp garlic
2 tblsp magic masala
1 tsp red chillies
½ tsp arad
1 tbls adega spice.. which can be bought from your spice
Marinate chicken with the above ingredients and cook in ghee for 10 to 15 minutes
Meanwhile make a sauce with:
4 tblsp butter
2 tblsp All Joy Chakalaka suace
3 tblsp Nandos Bushveld sauce
3 tblsp garlic peri peri sauce
3 tbls pmayonnaise
1 tsp red chilies
1 tsp Adega spice
Boil together till thick and pour over chicken and put foil over and grill in oven for about 10 minutes.

 

 SRIRACHA CHICKEN

Ingredients
Heat a pan with olive oil and add to it whole dry jeeru.
Then 1 heaped tsp of
Crushed garlic
Ginger
Red chili paste
As soon as the paste starts to infuse take it off heat.
Top the mixture up with:
1tsp salt
Lemon juice
Once mixture has cooled, rub the chicken with it and leave it to marinate for a few hours in the fridge.
Cook on low heat until done, place the chicken in a roasting dish and reserve the left over water in the pot.
Make a mixture with the following
2tbsp olive oil
2tbsp butter
4tbsp lemon juice
2tbsp honey
2tsp Sriracha sauce
Black pepper
2tbsp soya sauce

Add this mixture to your reserved water and let it boil together. Remove from heat as soon as sauce thickens a bit. Pour the sauce over the chicken and place it under a hot grill. Allow chicken to brown and sauce to get nice and sticky. Garnish with a generous amount of chopped coriander.

 

  

MOZAMBICAN CHICKEN

1 baby chicken butterflied

Marinate with the following ingredients
1 tab garlic
1 tsp red garlic masala
Lemonjuice
Olive oil
2 tsp salt
1 tsp lemon pepper
1/2 tsp black pepper
2 tsp crushed red chillie
1/2 tsp arad
1/2 tsp chillie powder
Crushed green chillie
Marinate overnight
Add ghee to a flat non stick pot cook chicken on high for 15 mins til done brown well till charred

Sauce
2 tab mayonnnaisse
1 tab garlic butter
3tab Minnies Mozambican sauce
2 tab Minnies Aged chillie sauce
1 tab lemon juice
2 tab Woolies lime and coriander mayo
1 tsp crushed red chillies
1 tsp dried parsley
Boil sauce ingredients
Add cooked chicken on platter or foiled board pour sauce over chicken sprinkle more parsley serve with chips
