Best of the best spring roll and moons savoury recipe (20.04.17)

 

 

RECIPES COURTESY KHATIJA EBRAHIM

 

SPRINGROLLS RECIPES

2 kg chicken fillet cubed
3 tsp butter
1 tsp salt
2 tsp white pepper
2 tsp garlic
2 tsp Crushed green chillies
1/4 tsp turmeric powder
2 tsp vinegar
3 tblsp mayonnaise

Method
Marinate fillet in the above spices and cook till done(dry out water completely) set aside
Stir fry 1 cup corn 1 cup green ,red ,yellow peppers cubed and 3 grated carrots .then add
3/4 cup boiled spaghetti mix into cooked chicken .Make a white sauce with milk and half packet Knorr 3 Cheese Sauce
boil until thick add mayo in then add grated mozzarella or Gouda cheese, chop dhania and spring onions into the mixture, now ready to fill spring rolls.

CHEESE SPRINGROLLS

500 gram gouda cheese.
250 gram tussers.
250 gram mozzarella.
1 small tin creamstyle sweetcorn.
1 large onion grated, squeeze water.
2 pkts 2 min noodles (boil) don’t use seasoning
ADD 1 tbsp green masala.
1 tbsp salt.
Chopped green danya.
Chopped spring onion.

VAGAAR: oil, mustard seeds, limri, sesame seeds, braise than cool.
Drain oil than add limri mixture to cheese. Toss well, fill springrolls, dip in egg, roll in breadcrumbs.

EASY SPRINGROLLS

1 kg chicken fillet (cubed)
5 tblsp ghee
Cook meat with ghee then add 4 tblsp green masala, 1 tsp salt, 1 tsp lemon pepper, 1 tsp white pepper, 1 tsp chicken spice.

Then add 1 chopped red pepper, 1 chopped green pepper, corn removed from the cob, cook for a while when almost done add 3 grated carrots and cook till water is burnt out.
Mix ½ cup vinegar with 1 tblsp maizena, and add to chicken mixture. Add 1 pkt 2 Minute Noodles, add chopped greens, mix well and serve

 

 


MOON RECIPES

PEPADEW AND CREAM CHEESE MOON FILLING

1/2 kg cubed chicken fillet
1onion cubed fine
1/2 tsp lemon pepper
1 tsp Ina Parmans garlic pepper
salt to taste
green masala to taste
crushed garlic
1 heaped tsp paprika
1tsp jeero
1tsp freshly ground black pepper 1tub cream cheese
Cook onion in ghee /oil till soft add crush garlic. Add chicken and rest of the ingredients. cook until almost done. add 1 tomato finely cubed and 1/4 cup chopped peppadews. cook till water burns out. When completely cold mix in 1 tub cream cheese and chopped green dhania

CHICKEN JALAPEÑO MOONS

500 g fillet cut in tiny cubed
1/2 tsp garlic
1 tblsp butter
3 Tblsp crystals hot sauce
2 tblsp jalapeños minced
1 tsp salt
1/4 tsp lemon pepper
Black pepper

1/2 cup milk
1 tblsp maizena
Make a paste

1/2 cup jalapeño (cut up)

In a non stick pot braise chicken on high in butter till dry. Add sauces & spices & cook till water is burnt out.
Add maizena paste & allow to simmer till thickened.
Set aside to cool.
When cool add the cut up jalapeño & fill moons.

 

VEGETABLE MOONS
1 shredded baby cabbage
1 grated onion[remove all the water]
1 shredded green pepper[colours are optional]
1 cup corn
Grated carrots
Boiled rice noodles
Mushrooms [optional]
Stir fry the veggies in oil, add 1 tbls aromat, salt, pepper, green masala. Let it cool.
Sauce~
1 ½ tbls butter
1 cup milk
1 ½ tbls maziena [boil]
When cool~Add salt, pepper, green dhania, spring onion, equal amounts of cheddar and mozarella cheese

 

CHICKEN AND MUSHROOM MOONS-

Filling
4 pieces chicken fillet cubed
1tsp salt
1tsp aromat
1tsp robertsons chicken spice
1tsp garlic
1tsp grounded chillies
1tsp black pepper powder
1/2 green pepper cubed
1tin creamstyle corn
1tray mushrooms(cleaned and steamed with salt and pepper)
1 tub fresh cream
1tsp flour
1tsp Knorr Pepper sauce
1tsp Knorr Mushroom sauce
Grated cheese

Braise chicken in ghee- add spices- add green pepper and creamstyle corn-add mushrooms- make a paste with the flour/pepper sauce/mushroom sauce and water and add to the chicken- add fresh cream- when cool add grated cheese! Must be dry and thick!

dough 

2cups water
2tblsp butter
Pinch of salt-
Bring to a boil- then add
2cups flour-
Stir vigourously until it forms a ball

Knead into a a smooth dough – roll out and cut with tupperware cutter- brush with egg- place a spoonful of filling in the centre and close over tightly Dip in egg and bread crumbs and freeze!
