Ingredients :
1 cup oil
1 cup sugar
3 eggs
2 cups grated carrots
¾ cup walnut/peacan nuts
3 tsp baking powder
1 ½ cups flour
2 tsp cinnamon
Pinch of salt
½ tsp bicarbonate of soda
¼ cup water
Method :
– Beat eggs and sugar well.
– Add oil and beat until light and fluffy.
– Add dry ingredients beat well.
– Add carrots and nuts
– Add the water
– Bake at 180 degrees for 30 to 40 minutes
To decorate:
When cake is cool, top with fresh cream and nuts or dust with icing sugar
